I have been wanting to install covers on my roof over the fans so I bought 2 MaxAir covers from Camping World. When I tried to install them I found out that I can't install the brackets, my fans have a double-wall making it impossible to get the nut on the bolt. Anybody else run into this issue and find a solution?

I am pretty sure mine were the same way. You have two choices
1. purchase a longer bolt and drill through until you can put on the washer/nut
2. use a small pilot hole, and then self tapping screws that wont go in too far.

I have the create a breeze fan. From the inside you can unscrew the plastic shield. With this removed you can put the nuts on the bolt. Hope this helps.

I installed a ShurFlo Fan and put the nut on the inside before installing the plastic insert on the inside.

I tried coming in from the bottom, but I am unable to reach the area where the bolts will come through the case. They fan is an assembly, I see no way to even take it apart, it looks like it is a single sealed unit. I will take another look at it tomorrow but I don't think I can take it apart as there were no visible seams.

What type of fan do you have? On my original fan the dome cover was just screwed into the metal sidewall.

I replace that with a Fantastic fan. I had to remove the ceiling flange from the inside and then remove the knobs and switches to remove the lower plate to see where the bolts would come through. It was so close to the upper surface of the fan, due to its low profile, so a nut would not fit there. I glued in pieces of ABS plastic to give the screws more to anchor themselves into, drilled small pilot hole and screwed on the mounting brackets.

I installed a MaxAir II on one of our Fantastic Fans. I used short, sheet metal type screws. Drilled the holes, filled with sealer and put the screws in. Works fine.

I don't know what type of fans Monaco installed on my coach. They are listed as "12V Attic Fan w/ Auto Dome" on the window sticker. I don't know what they mean by auto dome, but the cover has a motor that will open/close the cover, or you can pull on the handle and manually raise/lower the cover.

Thanks for the pictures of your install. If I can figure out how to get to the inside of the wall where the bolts will come through so I can add reinforcement to the plastic I could do something similar. I will have to see if I can remove the fan assembly enough to gain access.

My MaxAir's came with a short sheet metal screw. I drilled a small piolet hole and screwed the brackets to the fan. So far everything is great.

That sounds like a Fantastic Fan. If so it will come apart so the nuts can be put on. I did it with mine when I installed my MaxAir hinged cover.
