I was wondering if you had any quick meal suggestions for when my husband and I (and two young children) go camping. We need something fast that doesn't use alot of dishes. There's nothing more that I hate than having to stay in doors and do the dishes on a beautiful day.

I have one that I think even your kids could get into. I saw it on a recent RVToday show. It is an omelette in a bag. The Mrs. and I tried it. Came out pretty good. Cool thing is you only need a pan of boiling water.
Take some ziplock plastic bags (1 per person). Break how ever many eggs that person needs for their omelette. Add some "other" stuff like cheese, onions, sliced up lunch meat like ham or bologna or, if you have any left over cooked hamburger, throw it in. "Zip" the bag closed and squeeze it all over to mix the ingredients. Once that is done, place the bag in the boiling water and watch until it's about 1/2 done. Remove to re-mix the ingredients (Use potholders or towels since the ingredients are hot) and place back into the water. When it's done cooking, empty the ingredients out onto a paper plate, season to taste and enjoy.
When all done, dry out the pan - Throw away the paper plates, then go enjoy the rest of your day!

Our favorite quickie while camping is hot dogs. You can jazz them up by making them chili dogs or chili and cheese dogs. Kids can cook them by themselves over the fire. And they don't necessarily need any dishes (although we usually go with paper plates). Serve with chips, pork and beans, or anything else easy.
We travel with two young children and have always been a big fan of bringing leftovers from the previous dinner, especially for the first night. My wife will typically cook a big casserole or lasagna the night before we leave, then pack up the leftovers ready to drop into the trailer fridge.
Doesn't work if you don't have AC power to nuke it in the microwave, of course...
This is where having a microwave is a blessing - not to mention a fridge and freezer! I'd bring along frozen pizzas, microwavable mac and cheese, popcorn chicken, stuffed frozen chicken, and even boil-in-bag veggies.. just cut a slit in the bag, microwave for 5 minutes, empty into a paper bowl and you're all set. The DH and I rarely use the oven ourselves, and the stove not too often. We visit areas (as opposed to just camping and staying put) and take advantage of the local cuisine once in a while, so there's almost always leftovers we can heat up the next day, too.

Hot dogs left overs, Kraft Dinner or frozen entrees like Michelinas.
Frozen entrees are great if you have electricity, take them out of the freezer, throw them in the microwave as necessary and dinner is served in its own little box. Paper cups and plastic spoons or forks and then garbage everything when done!
Hot dogs, brats, hamburgers, grilled cheese. I also make up a few boxes of mac & cheese at home & bring it along to reheat. Sandwiches work well also. I hate dishes so we use lots of paper plates, just throw in fire when done.

Only one dirty dish (the pot itself) and very little time spend preparing. Works GREAT! I'd highly recommend it to everyone!
