Just the other day we were travelling on I95 at highway speed. The yello exhaust regen light began flashing and after a while it went off.
What causes that to occur?
What maintenance, if any, is needed after it has occurred?

Come on there's no reason to read the owners manual when you have forums to post Q's in.
To the OP it is the normal self cleaning of the particulate filter of your exhaust system. When you find time I suggest you read that manual a lot of interesting info in it.

I read the manual and it doesn't say what causes it, how frequently it occurs, and if any maintenance is needed after it occurs.
Just as a shot in the dark, I'm going to guess you have a diesel engine produced after 1/1/2007. It has a diesel partculate filter that collects the diesel soot, then burns it off every so often, using fuel from the fuel tank. That is called a "regeneration."
If you're on the highway and the regen light comes on, maintain your highway speeds until it goes off. If you have to stop, there is a way to stop the regeneration, but you'll have to resume it all over again. The engine needs to stay in a "steady state," whether a fairly steady highway speed or idle speed.
