I have a...
DOMETIC Designer Series RM2807
The Freezer on top works excellent.
But the Refrigerator is not as cold as before.
I had it off for about 2 weeks hoping when I turned it on would fix the problem.
Any suggestions?

You can check the thermistor to assure its operating correctly. Disconnect the thermistor harness from the 2-pin terminal on the lower circuit board.Place a thermistor in a glass of ice water.
Wait 2 to 3 minutes. You should get a reading
of approximately 7,000 to 10,000 ohms.

Sounds like it still works but with issues. If you or the wife cleaned it before it sat for two weeks check to see no one moved the thermister sensor on the frige fins. If they get slid down the internal temp goes up. Try raising it on the fin to see if it cools down.

I have a thermometer in both the freezer and refrigerator. The temps change radically, for no obvious reason. This is true summer or winter, on propane or 120-volt. These temp swings occur even if I do not open either door. The freezer will go between 25 to 7 degrees. The refrigerator will go 33 to 42 degrees.
I have a refrigerator (residential 120-volt) in the basement of my house. It also has radical temp changes, without the door being opened.
It would help to know just how much change you are experiencing. It is pretty easy to guess and replace a lot of parts, just to find it is operating properly. How can anyone trouble shoot without knowing the temperature? Not cold at all is one thing, "not as cold as before" is tough without know how cold it was before.
I wonder just how many people have thermometers in the freezer and refrigerator, that can be read outside the fridge? My thermometer can, and also shows the minimum and maximum temps?
I have installed fans and coil baffles, and honestly cannot say either was of any benefit. That is using thermometers to check the temps. I have also experienced having the coils, due to their having gone bad.

CLEAN your chimney!
More than once I've got BAD PROPANE from some hole in the wall station and ended up with my heat exchanger and chimney full of carbon crap.
Just banging on it made carbon fall out.
Also, added a fan to the top exchanger to help vent out the heat out the top vent - this dropped my temp 10-15 degrees inside the fridge.

When you say chimney is rhis the refer. vent on the roof? How do I clean it?

Here's what Wayne and I have for thermometers. I liked them so much I put one in my house fridge too.
It records the highest and the lowest temp....You can, with the push of a button, reset those readings and obtain new high and lows.
These folks are great and have the best price for this combo remote sensing 2 sensor fridge thermometers:
