RE: No longer a Moderator

hope you're going to do some really fun stuff now that you have all the extra time on your hands. I mostly just read, but have appreciated the way you corral the topic back on track and keep things under control. Best of roads and campsites in the future.

RE: Meatloaf making tip...

Another thing that works to make a really good meatloaf is Grapenuts--the cereal.

RE: Zucchini anyone?

Fresh Green beans..... wash and cut into about 1" pieces Brown 4 (or moreO) strips of bacon, diced up, use grease from cooking in pot for part of seasoning. Can be a small amount just for the seasoning or several slices if you want to make this most of your meal. maybe one onion chopped up (not too fine) Unpeeled New potatoes (or old work as well, just peel them first) Salt and pepper to taste Add all ingredients with enough water to prevent burning and cook until beans and potatoes are tender. I usually do them beyond just tender (probably over cooked for some people). Sorry this isn;t more specific... I don;t really have a "recipe" for this, I just put it all together, let it cook, and we love it, often just this is our whole meal. I just use however many beans I have when I pick my crop and then add the potatoes and bacon to be enough to make a meal. The only thing I basically keep the same is the one onion.....but I use that amount in a lot of the things I make...LOL

RE: Refrigerator Mishap

Second on the vanilla in a small, open dish. Leave it for several days. Works really well.

RE: Two weeks in a Class B

There was a tub in the Road Treks sometime in the early to mid 90's. I think it was the model that also was the closet and the clothes swung out over the bed when the tub was in use. At least that was the space it was in. found an old brochure with it, it is dated 1994 and model was 190 Independant, also had one on the 210 model in same brochure.

RE: Two weeks in a Class B

We spent our first 2 week session in the B, bumming around Colorado and Utah. The newly installed sit-down shower worked great, and we never felt cramped. I'll upload some images. Pictures are beautiful, and so clear and bright..... makes me want to go back to Colorado. What is your "sit-down shower" or did you post about it sometime back and I missed it? Sounds of interest.

RE: Section off your site?

I've seen X-pens used to create a dog run area under the front end of a fifth wheel. It looks like fencing, but would block that area, not if someone was determined to go through a campsite.

RE: Mexican party recipes?

Black bean and corn salsa 1 can black beans, rinsed and drained 1 can sweet corn, rinsed and drained 1/4 - 1/2 cup chopped red onion (chop to about the size of the beans) 1/2 red bell pepper, seeded and diced (same size as the rest of the stuff) 1 medium size sweet apple, diced (same size again) 2-4 cloves finely chopped garlic 1-2 TAB chopped fresh cilantro Combine the above ingredients in a large bowl. Drizzle with about 4 tablespoons of olive oil and 1 tablespoon lime juice. Add salt and pepper to taste. This gets better after it sits for a while and is best served at room temp (but store it in the fridge) You may need to add more olive oil to taste, you just want the stuff to be lightly coated. Serve with tortilla chips for scooping. I like this one because it's easy to make in the RV, doesn't involve any cooking and is relatively healthy. ***I think this would be good rolled into a tortilla with maybe some cheese, chicken, and/or avacados for a yummy lunch. or in a wrap just like it is. Quick and easy if already mixed up.

RE: Plowshare cooking

my family (older parents) have used one as the base for the campfire for probably 35 years. Got it from a farming uncle in N. Dakota and it is actually curved disc blade with a big nick out of one side where they hit one too many rocks. We put it on a short piece of cement culvert, and it works great. It's probably about 24" diameter so makes for a nice size fire. I have inherited it, and it works great in the back yard as well. Not too big, but enough be enjoyable. Have not used it for cooking but I know it is becoming a thing to do, especially in the southwest.

RE: The Roadtrek 170-Versatile is in production.

Funny you should post this info today. Just this aftenoon, I was looking at the Guaranty RV (Junction City, OR dealer)site at their available stock and they had one (in stock I thhink) It was listed as a "Versatile", but I thought "No, couldn't be because Road Trek doesn't make one. Looks nice, albeit a bit short on mid section storage. It is in their listings of new stock B vans, and it shows several interior pix. Sorry, not computer savvy enough to post a clicky link. www.guaranty.com

RE: Rice with dinner, then desert

We used to sometimes have rice with sugar, cinnamon and milk for breakfast, like a hot cereal sort of. I wasnt very fond of rice as a kid so it wasn;t one of my favorites, but now I love just rice with butter, salt and pepper....can eat a big bowl or plate of just that.

RE: Baked Creamy Chicken And Dumplings

I have been looking at this recipe and finally found some self rising flour, but it is in 5# packages and Im not sure what else I;'d use this for. Can you use regular flour, the milk and perhaps some baking powder or does it need to be the self rising flour? Thanks in advance, this sounds like a wonderful dish.

RE: Small class B's, who likes them and why?

Yes, Mumkin, I too have been curious as to what you have done to you mini to make it work for you. Perhaps you could explain it on another thread so as not to hijack this one. Thanks.

RE: need your best bake bean recipes

I do something similar to Mrs. Mik and Kareninthewoods, except I use some B&M baked beans in there someplace and also a chopped bell pepper and minced garlic that can either be sauteed a bit with the onion or even put in raw if you are going to cook them some more n the oven or on the stove. I have also used sometimes chopped ham in place of bacon or grond beef if I want some meat in them. I didn;t see the bell pepper in Dianne's recipe.... Ranch beans (already seasoned) are a real good addition as well. I tend to use less of the pork and beans.

RE: Pleasure Way Plateau screen door

For an economical solution, get a curtain tension spring rod that will fit the width of your side and back entries. Buy some mosquito netting yardage. I did enought to do 2 lengths for both side and back so there would be a middle opening. Stitch rod pocket across top end of all pieces and then just slide it on when you pop it in the openings. Takes up very little space and I did it for I think about $25-35. Cost of rods and fabric which I got at REI, not sure if they are all over, but it is a recreational equipment type of store. I'm sure there are other sources of mosquito netting by the yard. Note: I did leave a couple of inches of header on the rod pocket to fill in the space above the rod when in the opening. Can use some magnets if you need it to be a tighter fit around the edge.

RE: Reuben Bites

Ol Blue, do you think it would work to bake these, using a parchment covered cookie sheet. That would cut the calories from the frying, but would it dry out too much. These sound good though, I love Reubens.

RE: Hoecake?

At our house we make something similar to the johnny cakes/cornpone, but we call it hotwater cornbread. Mix Cornmeal (I like white for this), a spoonful of flour, some salt, maybe a tad of sugar, and pour boilng water over it to make moist, not runny and not to lumpy. Can pat into shape with hands (careful its hot) and fry in hot oil or drop by spoonfuls into hot grease, til it browns. I like it dropped the best because there are lots of crunchy "spurs" sticking out and I like that crunch. We usually do it with a big pan of some kind of greens. Yummy!!

Coleman propane Skillet?!?

Has anyone used one of these. It is like a large electric frying pan but it hooks up to one of the 16 oz, propane gas cylinders. Curious as to whether it works well and is worth the $60.00 or so cost. Looks like it would work well for some frying as well as for things needing a griddle like pancakes. Have looked at these in the store for a couple of years and debated so now I'm asking you, the experts. Worth it or not?
