RE: Homemade yeast rolls recipe that is easy.

I feel success with yeast bread depends on how you prepare the yeast for the dough. I put water in a small bowl (for yeast) and microwave it until very hot. Discard the water & you have a warmed up bowl. Yeast needs a small amount of sugar so I add that, then add very hot water. It might have to sit a little while to cool down (too hot will kill the yeast) then I sprinkle in the yeast. Yeast needs a little time but should get real bubbly & active. Meanwhile, I mix about 1/2 the flour with the receipe liquid (warm), then the bubbly yeast, then knead in the rest of the flour. You will most likely have success when your yeast is treated this way.

I never bake with mine as I do not like the shape of the loaf. I do use the dough feature - remove dough, knead down and shape for a bread pan and bake in the regular oven.

RE: How long can you "keep" dough.....

I've done it this way for years: stir up the dough the night before, form the buns and put them in greased pans. Cover tightly with plastic wrap and then cover with a double thickness of white dishtowels. Put the pans in the refrigerator or out in our cold porch. They will slowly rise overnight. In the AM, take them out and let pans sit until the chill is off. Remove coverings (of course !) and bake in the preheated oven. When I form the buns, I reduce the size a bit to compensate for the longer rise time.

RE: Do you sew?

I enjoy sewing but don't enjoy standing in line for 20 minutes to check out. We have 2 big fabric stores in this area but they can't find help. The "Help Wanted" sign is always in the window and the few ladies working there are often covering more than one shift so its a sad situation.

I have store cards only for the extra discount offers that comes with them. I use them, then immediately walk to the Customer Service counter with receipt in my hand. I whip out my cash and pay it in full before I leave the store.

I cook the WHOLE package at one time so its a once a week job. 3 cups oatmeal cooked with 12 and 1/2 cups water. We like the extra 1/2 cup of water but that's just us. I add dried fruit just before its done. Let it sit until cool then store in covered container in refrig. To eat, we spoon enough in a cereal bowl and warm it in the microwave. Add cinnamon, walnuts/pecans and skim milk. Sticks to the ribs & very good for us.

Egg salad on a fresh bun or bread - it's to die for. Egg Bake made on Saturday then baked on Sunday morning for breakfast. Fried egg sandwich for lunch. Potato salad.

We went on the Western Caribbean cruise a few years ago and did a shore excursion each day but I would not do that again. I would go to the beach or find a taxi & have the driver give us a tour of the area.

We saw a Camper van with German plates in Alaska this past summer. We decided it probably cost more to ship it over & back than our whole 5 week trip cost.

When in Alaska this summer, I bought a real Alaskan Ulu & chopping board - it's not a cheap imported knock-off. I watched the demo and it appears it will get used often if it's kept handy on the counter. I am using it every day and I'm really glad I have it. I have several other chopping aids (elec and non-elec) and they have their uses too.

When we bought our TT the salesman told us about noticing tracks in the snow leading to a TT in the back row of the lot so they investigated and found a homeless person living in there. He had broken the lock to gain entry.

I know nothing about these services but I do know quite a bit about conventional mail delivery and hard as it is for people to admit, there is often fault on both sides when you work with the public. A school secretary showed me an envelope left on her desk - cash inside & written on the outside were the words "Lunch Money" but no name ! She put it in her desk & waited it out until an angry parent who had been billed for non-payment called & accused the school of being careless. Bank employees have told me about finding envelopes of cash in their night deposits but no deposit ticket or any clue of who it belongs to. In the days of counter check blanks, it took some detective work to figure out who neglected to sign their check and until that was determined, the bank had to refuse payment, so maybe someone's light bill didn't get paid on time. Forms don't always get filled out properly & in today's world, we put a lot of trust into e-mails reaching their intended destinations without our follow-up. We are all human - and we all make mistakes - but we can usually work things out. Like the old saying goes "we catch more flies with honey then vinegar".

This was in our area newspaper this morning: Man lives in Assisted Living place & will be 99 on 09-09-09 ! His daughter will be taking him to her house and cooking him a meal on his birthday. Family is planning a party but it won't be held until Sunday after. Looks like he has a full head of beautiful white hair and his eyes are bright in the picture so I'd say he's doing pretty good. Grandson suggested going on a cruise next year for his 100th birthday, but he's not interested.

I want to give back by helping elderly. Our parents are in their high 80's & live in their own homes. We visit 2X a month but we are 75 miles away & we can't tell you how much we appreciate their good neighbors who are willing to change a light bulb, fix a screen door, stop & say Hello, take care of the lawn/snow (yes, they get paid), share their garden, on and on !! This will be "my hobby".

We were in Alaska in June/July of 2009. It worked best for us to stock up groceries & supplies in the larger towns and the prices were about the same as at home. Apply for the savings card at the customer service counter - you will get it on the spot and its worth having for the savings it give you. We got 2 lb boxes of blueberries for $4.00 - without the card !! If you have the National Park Pass ($10 for over age 62) you can camp there for half price - but no electricity provided so a generator is pretty nice to have.

Even if there are stores along the way, I absolutely hate to buy something if I have it at home. We have more band-aids in the house than we will ever use - so it's my personal gripe if we need one and have to buy more.

This isn't about camping discounts but years ago my vaccuum cleaner gave up the ship so it went to the garbage. I knew a woman who was selling Rainbow vaccuums because I thought that was what I wanted. She gave me the sales pitch and demonstration and said she would give me $100 discount for my old vaccuum. Oh great . . mine went in the garbage truck yesterday ! She took $100 off the invoice anyway.
