I am trying to figure the best way to prepare rabbit. I will probably be cooking it in about 2 months once it gets a bit fatter. Here is a photo of my future meal on my front walkway right after she ate some of my tickseed flowers that were just getting to a decent size. Suggestions?

A tent from wal-mart.
The back of the 1998 Mercury Villager
The back of my new loves Honda Element
or...
On the ground with a $14.95 tarp from Pepboys over us.

Yes I do have it chained up. It does have a little house it can get into at night though. Caught one last year but a hawk spirited it away before I could harvest it.

Shame on you! Trapping something you don't even know how to cook! Why rabbit stew is the only way to go! Tastes just like chicken! LOL

Nick,
Based on my ONE experience with a rabbit not purchased from a reliable butcher - DON'T!!

Cage raised and store bought - OK, go fo it with any of the good ways to fix it. BUT...wild? Big NO from me! Tastes 'strange' and no matter how or how long you cook it, it's still tough to eat!

Buy a steak and turn the little blighter loose!!

if you are serious about, then when you butcher it, check for spots on the liver. if there are, throw it away. it is a disease they can get. i have never gotten one that had a problem.

cook them up just like fried chicken. i love the taste of rabbit. tastes MUCH better then a farm raised rabbit.

I agree with the liver inspection. I remember that from my youth, when we raised rabbits for meat (late '40's into mid 50's). Other than that, when you butcher them, just quarter and fry, as you would chicken. Literally, has fooled a lot of people - my DW included !

Use gloves when you skin that rabbit! Tularemia is not a joke.
My dad used to hunt rabbit and squirrel in the Fall, when they are at their best, fat and tasty. Cut them up like chicken and brown them a little in some oil in a heavy pot; then add onion, garlic, bay leaf, a little salt and pepper, a can of chicken stock and some white wine, and let them simmer along for a couple hours til the meat is very tender. Like all stews, this is better made the day before. Serve this with lots of crusty bread to mop up the juices.
