Just got back from Nags Head, NC with a bunch of tuna. Can anyone give me a good recipe for 1) Marinade, 2) A dipping sauce, preferably a spicey one.

I will give you a simple method that a tuna boat captain gave me. Just wrap chunks in bacon, douse them with your favorite BBQ sauce and put them on the grill. The tuna will cook much faster than the bacon so it works best if you precook the bacon.

Try a dipping sauce of:
1/4 cup soy sauce
1/2 tsp sesame oil
1/2 tsp Nuoc Mam (Vietnamese fish sauce, in the supermarket)
2 tsps. minced garlic
2 tsps. grated fresh gingerroot
juice of 1 lime
Also, try poaching the tuna with some celery, onion, a little salt, pepper and lemon juice, for a very short time or just til done in the middle and use as you would canned tuna. You will never look back.
Try this...Take Hellmans Mayo (for some reason, it's got to be hellmans) and fresh Parmesian Cheese. Mix about a half cup of each, then spread it on the tuna. Grill it til the tuna is done without turning the fish. Tim

We were Cabo in Feb and my wife caught a 40lb tuna. We took it back to the hotel and the chefs there perpared it for us 3 different ways for dinner that night. Blackened, grilled with garlic butter, and breaded and deep fried. All were excellent but all 8 of us agreed that the deep fried was hands down the best. When is the last time you got 8 people to agree on anything!
As a commercial fisherman, who has caught many Bluefin tuna, I have had alot of time to experiment with different recipes. My all time favorite is to marinate overnite in Teryaki sauce. Then grill it. Cold leftovers make an awsome tuna salad when mixed with mayo. Also have smoked alot of it too. The napes (belly flaps) are the best because of their high fat content.
