This recipe is my sons favorite recipe. I also make it with leftover cooked chicken or turkey it is a pretty quick meal.
Pasta With Garlic Cream and Smoked Salmon
12 oz. penne pasta
2 tablespoon olive oil
4 tablespoon butter
1/4 teaspoon each salt & pepper
2 oz. (or more) grated parmesan cheese
6 oz. smoked salmon
1 tablespoon minced garlic
2 cups whipping cream
2 tablespoon finely chopped onion
Cook pasta in boiling salted water until al dente (firm to the bite, but not cooked all the way through) drain, set aside.
Add garlic and onions in olive oil over medium heat. Cook until the garlic and onions begin to sweat, but doesn't turn brown. Add butter. Once butter melts, add cream and bring to a simmer. Reduce about 25%.
Add the pasta and keep simmering. Then add the smoked salmon (cut into 1" cubes) and add half of the cheese. Toss well until the cheese is incorporated into sauce. Season with salt and pepper. Top with remaining cheese and serve.
