What are your favorite recipes on the road? Cooking while traveling? I am trying to get good ideas of quick and easy? What to throw in the crockpot while on the road or on the beach?

I don't have any specific recipes, but I do know that there is a web site you might like to try. It's allrecipes.com and I have gotten quite a few good ideas from there. Hope this helps!

I've never made this while we are camping, but one of our easiest and favorite crockpot meals is just a roast with a jar of salsa poured over it! I usually use the medium sized ChiChi's salsa jar - not the small salsa jars you find near the chips.

I'm always looking out for easy recipes, too. Check out reynoldswrap.com -- they have some really great recipes with EASY clean-up.
We also have recently discovered the marinated pork loin in the grocery store. Cut it up and put it on the grill -- AWESOME and so tender.
I also use a lot of recipes from The Four Ingredient Recipe Book. Simple things the kids can help with on a rainy day or camping when I don't have my whole kitchen with me.
Our favorite crock pot meal right now is simply chicken in a pot. Cut fresh veggies (carrots, celery, onion) throw it in the pot then place a 4-5 lb chicken on top. Cook on low for 8-10 hours. Very tender, not too heavy, and the kids love it!

My personal favorite is one I do in the electric fry pan. I use several pieces of cubed beef (or I use the edge of a plate and pound the dickens out of some round steak), cut it into roughly 4 inch square pieces, then put a dollop of Stove Top stuffing in the middle. Roll it up and secure with tooth picks. I put it in the fry pan, cover it with a 50/50 mix of cream of mushroom soup and golden mushroom soup. Cook for a little over an hour and enjoy. Assembly time is short, and the fry pan takes care of everything else. I didn't say it earlier, but the stuffing mix has to be a finished mix, not dry.

On edit, I guess I should tell you that I put the pan at 350 degrees.

Electric fry pan.....crockpot.....sorry don't use them while camping...but I am a huge advocate of the cast iron dutch oven...

Well, here it is.....Open Up The Windows Chili aka 3 Bean Chili

1-2 pounds of lean burger
1-2 pound of boneless beef short ribs (or stewing beef)
1 large onion (diced)
1-2 cans chili beans(I kinda like the ones in the zesty sauce)
1-2 cans pinto beans
1-2 cans dark red kidney beans
1-2 cans mexican stewed tomatoes
1 large can crushed tomatoes
1-2 packets of chili seasoning...
1-2 cans of beer
(optional) if you like jalapenos, or sarenos, chop them up and add with the onions..

Cook the burger in a frying pan, and add the onion when the burger is about done, cook until the onions are translucent, drain and toss in the dutch oven. Cut the beef into cubes, and cook in the frying pan with a little beer, (if you're thirsty take a swig too). In the meantime add all of the canned goods into the dutch oven and stir. Don't drain the beef, just add it all into the crockpot. Place 8 hot coals under the dutch oven, and about 16 on top. Add 5 or 6 to the bottom, and 10 or 12 to the top every hour or so. Pop the lid off every once in a while and give it a stir. The longer it cooks, the better it is. I generally try to cook mine about 5-6 hours. The second can of beer is for the cook. Serve with whatever you have, cornbread, rolls, biscuits. My only advice is after having this for supper, sleep with the windows in the camper open.....

The crock pot is great--make sloppy joes, taco meat, spaghetti sauce, etc. before you go and just cook all day. We travel with a lot of athletes and after awhile, they really want something hot and not in a bun. I also got a good recipe for chicken enhiladas that are cooked in the crock pot--I will need to find it. But until then, I think it was just a basic recipe but layered with round flour tortillas with the pre-cooked chicken, salsa, cheeses etc. between it. Yummy!

This isn't a recipe but it's a trick I've found in any cooking with pots, pans, aluminum foil. I first spray everything even my hamburg
flipper with PAM spray. It makes cleaning up great.
Recipe, make baking powder biscuits, role or flatten out ,scoop strawberry jam inside -role up like a tube. Cook amongst heated rocks in open fire in aluminum foil sprayed first w/ Pam. Keep rotating.

One of my kids favorite is very simple--packet meals. One favorite...take a large piece of foil for each serving, lay flat. add a little oil,slice one potatoe and several slices of onion and green pepper onto foil. Sprinkle with garlic or other seasonongs. Add hamburger pattie on top, roll foil tightly closed, place on grill, several inches from heat Turn once, after 10 minutes or so, depending on the heat from the grill or fire. Open, add cheese, etc. to patty, and eat right off of the foil. Another favoirite...lemon juice, a little oil, sliced onions under a salmon steak or trout. Same cooking procedure!! Little prep time or clean up!!

I like to pre brown up one pound freezer packs of hamburger. We toss them in the freezer in the fifth and have dinner quick! I also do the same with chicken strips seasoned and sautaed with lemon pepper and oilve oil. De frost em.... Enjoy over tossed salad? Tortilla wraps, or with the hamburger make a quick taco salad, hamburger helper? or how about spag sauce? Anything goes.

Also those birds eye brand frozen veggie packs? We have a rice maker which is handy and a MUST HAVE on trips.
