Here is a good, easy and economical chicken tortilla soup recipe. I've made it myself and it is really good. You can adjust the heat to your liking by the number of jalapeno peppers that you use in the recipe and you can adjust the amount of salt. Since I like it a bit hotter, I added another jalapeno pepper and some green chilies. This was posted on a knitting site and it is adapted from a recipe called SnAntonio Tortilla Soup by Rashell Harris in "Fix it and Forget it Lightly".

1 Tbsp. olive oil
1 onion, chopped
2 garlic cloves, minced
2 tsp. ground cumin
1 14/5 oz. cans chicken broth (if you use low sodium, you will need to add salt to the soup)
1 jalapeno pepper, minced (wear gloves and remove seeds, then chop)
1/4/tsp. black pepper
1/5 lbs boneless, skinless chicken breasts
1/2 bag frozen corn
2 C. water

Combine all ingredients in a 5 quart slow cooker. Cover and cook on low 6-8 hours or on high 4-6 hours. 30 minutes before serving, remove chicken breasts, then shred them and return them to the crockpot. Serve with low-fat cheese, chopped cilantro, low-fat sour cream and crushed tortilla chips or sliced tortillas for garnish.

This sounds very good, but looks like it take a while to prepare and cook.
I have a very simple recepie if you would like to try it and compare.

2-4 chicken breast cut up in 1 inch pieces.
( very easy to cut up if partly frozen )
2 cans cream of chicken soup
2 cups milk
2 cans yellow corn
1 can rotel tomatoes ( I like mild but you can get hot )
2 cans crushed tomatoes
1 pkg. Taco Seasoning mix
1 tsp. garlic powder or minced garlic.
1 medium onion - chopped fine

In Large skillet sauté chicken in 2tsp oil, onion, garlic, salt and pepper until done.
In large soup pan combine cream of chicken soup, milk, and Taco Seasoning mix, add Chicken, corn and tomatoes.
Simmer for 1hr.
Enjoy ! Serve with grated Cheese and Totilla chips.

It does sound good too. My only problem is that I don't like creamy soup--it's a texture thing! Everyone likes their soup a bit different. I might try it with chicken broth instead of the cream of chicken soup and let you know the results.

Actually, the only thing that you need to prepare for the recipe that I posted is the jalapeno(s)and the garlic cloves. Neither of them take very long to mince. Otherwise, you just dump everything else into the crockpot and turn it on. It only took me a couple of minutes to shred the chicken with a couple of forks and put them back into the crockpot. It is getting to be that time of year--even here in Oklahoma--that soup suddenly starts to sound good again.

Both have tortilla chips as garnish. They don't normally go into the soup because they'll get soggy. They add a nice crunch when used on top of the soup at serving time.
