What does it take to wire a 5 to 4 wire trailer light converter on a Freightliner M-2? I've tried two 5 to 4 wire converters now (thinking the first was bad). Power goes in but doesn't come out, the second one I tried was never even hooked to a trailer. I'm thinking it must be something to do with the trailer light relays but don't know where to go from here?

I am guessing that you have amber turn signals on MH and red on toad.
I didn't find any converters on Hoppy website that can accomplish this. What part number do you have?
They are normally easy to wire up. The unit identifies the turn signal inputs and sends them to the correct output if there is no steady signal.
There should be three wires on input and two on output.
There is no connection to the tailights.
Most places sell a 2 to 3 converter and not a 3 to 2 converter. The 2 to 3 cannot be used as the diodes would block the power.
Leisure Components model 401 or 402U is the type you should be looking for.

Actually I tried two different ones, heres a link to the Hoppy, which I bought from Napa

The other one that I tried was an MME products 3 to 2 wire which stated that it's for towing american trailers with a foreign auto.

I'm wondering if it's something to do with the Freightliner chassis?

The Napa one has four input wires including one for tailights. I didn't see any wiring diagram, but that doesn't seem correct.
The MME that I looked at in catalog needs a 12 volt supply to work. Which model did you get?
If power is going into the unit then it should come out. Remmeber you have to reverse your thinking in some cases. Input is from car(motorhome), trailer is to toad.

The MME only had 3 wires on the Car side and 2 on the trailer side, no power supply,

Try putting a temporary light on the input side to see if it stays lit while the converter is wired in.
