"Martha Stewarts Jalapeno Corn Muffins"

You can go online to martha stewart.com and do a search too.
We make these in our MH. We actually use a smaller muffin pan and make smaller muffins. It will make
24 smaller muffins. By the way, they hold up really well, no crumbling.
Serves 4.
8 tablespoons (1 stick) unsalted butter, plus more for tin, melted
3/4 cup nonfat buttermilk
2 large eggs
1/2 cup sour cream
1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup packed light-brown sugar
2 tablespoons baking powder
1 teaspoon coarse salt
2 jalapenos, seeded and finely chopped
1/4 cup plus 2 tablespoons fresh or frozen (thawed) corn kernels
Unsalted butter, for serving
DIRECTIONS
Preheat oven to 375 degrees. Brush the cups of a standard 12-cup muffin tin with melted butter, and set aside. Whisk together buttermilk, eggs, and sour cream in a medium bowl until combined, and set aside. Whisk together cornmeal, flour, sugar, baking powder, salt, jalapenos, and corn in a large bowl until combined.
With a rubber spatula, fold buttermilk mixture into cornmeal mixture until well combined. Fold in melted butter. Divide batter among muffin cups, filling each three-quarters full. Bake until a cake tester inserted into centers comes out clean, about 25 minutes. Let muffins cool in tin 5 minutes. Turn out into a basket or bowl lined with a clean kitchen towel; cover to keep warm. Serve with butter.

Do not seal the vent cover, as water will get trapped in it as cause some major headaches.
I sealed all my vent openings with Eternabond.
I agree with Home Skillet. Also to make it easier to keep it clean under the vent covers you can cut a 2 inch round hole in the top of the Max Air vent cover and put one of those metal electrical pop-in cover plugs in the hole. Then you can pop the cover plug out when needed and stick your garden hose sprayer in the hole to rinse out all the dirt and debris. Pop the plug cover back in and you are done.
That was funny!!!!

OK, so what do the people that live full time do with their refrigerators? They run them 24/7/365. We keep our MH plugged in all the time, so we DO run the fridge all the time. There is too much stuff in there to unload every time we go out.

Well, I guess that the old days of getting something for nothing is over. Spend thousands of dollars for the RV, but expect to park it somewhere for free (so to speak). If the state wouldn't spend money that it didn't have in the first place, they wouldn't have to do stuff like this. We get what we vote for!!

One thing that I do is to keep a volt-minder plugged in and when I notice that the voltage is low, I will not use certain appliances, especially the air conditioner. I keep my MH plugged in at home on a 20 amp circuit, and it runs the air conditioner just fine.

RE: Camped in Bear country in our PUP, guess what happened...

I know a wildlife photographer that makes his living by taking photos of all sorts of wildlife in Alaska. Also prints quality calendars each year. He was telling me of one of his best friends and also a photog in Alaska. Had been doing it for years. Guess what? His buddy was killed and eaten by a bear while the guy's wife watched. Just goes to show that nobody can be too careful.

RE: California Hwy 1 - Yes/No?

Our first RV trip was south on Hwy1. We have a 26 ft Class C. My wife was terrified. I was afraid to take my eye off the road even for a second. Luckily, I was driving and didn't see the drop offs on the right side. My wife made me ride on the DOTS. The road gets bad after Big Sur to just before San Simeon (about 60 miles). After that it is a nice ride.
