RE: canning

I can... whatever I have a lot of in a given year. This year, I am up to my elbows in tomatoes. I'm also trying to learn to make a fermented sauce also that doesn't need heat processing since it is so horribly hot in Kansas. Looks like I'll have a great crop of winter squash, but won't need to worry about canning any of that until the weather cools. Wanting to get a late crop of green beans in also, the first crop did not do well.
