May I add two other KOAs I would recommend. Lyman, WY and Douglas, WY. We stayed at these because they were in the place we wanted to be. Other options were not available at the time. Glad there wasn't. We had very enjoyable stays at both parks.

Disagree with you about hwy 95. It's one of my favorites. I take it every chance I get. You were wise not to take 9 to the east entrance of Zion. However it's not as stressful as hwy 12.

To get to I-10 one must deal with the LA area. Not fun. If you are coming down I-5 take route 58 east from Bakersfield to I-40 and save yourself a lot of trouble.

Mid September is a fine time for the Grand Canyon. Still pretty hot in LV/Quartzsite/Yuma until mid/late October.

KOA in Beaver would be about half way If you are driving I-15.
I suggest that you take hwy 93 instead. 93 to Ash Springs, 318/6 to Ely. Overnight, then 93 to Arco, then 20 to West Yellowstone. Less traffic and no slowdown for SLC traffic.

It's 140 miles from Moab to Mesa Verde. That's a little too much for a day trip. There's isn't much at 4 corners. Recommend that you skip it.
If you do decide to do it, CO-41/UT-162 from US-160 to Bluff, UT will get you on your way back to Moab.

Looks more like a ripe California or New Mexico chili to me. California is milder than New Mexico. You will just have to test. Both will have to have skin removed. For how to, See:

I disagree with bumpy re Monument Valley. It is just as important to visit as Canyon deChelly. Take the all day tour.
The best alternate route to Bryce from Zion is to return to I-15 and go north to UT-20 east to US-89 then south to UT-12 to Bryce.
From Mesa Verde, we usually move over to Bluff, UT (Cadillac Ranch RV Park) to spend a couple of days (Valley of the Gods, Natural Bridges, Hovenweep) then on to Monument Valley (Gourdings Campground) for a day or two. You might consider a day or two at Page AZ to visit Antelope Canyon.

RE: Highway 89 from Kanub Utah south to Deming NM

89 is a good road all the way south to Flagstaff. Take I-17 south from there if you are concerned about crooked and steep roads.
Bryce and Zion are almost in my back yard. October is the best month for both parks.
