RE: Traeger pellet grill question

I have owned a pellet grill for about 5 years. Not the Traeger, but they all work about the same.
First, you should know that it really isn't a "grill." And I know the Traeger folks like to say it will get hot enough to sear a steak. I say no way. I have a gas appliance that I use for steaks and that works fine for me.
The pellet devices are really just smokey ovens. The good thing about them is temperature control. It took me a while to adapt, but once I got the hang of it, it became a "set-and-forget" device that I truly enjoy having.
So, for example, if you do a lot of ribs, a pellet smoker will make you very happy. Also, I use it to make a smokey meat loaf. Once I served it out of the pellet smoker, we have never done one in the standard oven again.
If you are mostly steaks and hamburgers, don't buy it. But, I have no doubt you will love what it will do for ribs, fish, pork loin....on and on.
I have 4 other smokers and/or grills. I use my pellet smoker the most and we cook all year round. Hope this helps.

RE: Vinegar based BBQ Sauce??

Well, I certainly enjoy all the BBQ threads when they pop up and I rarely chime in, but just to keep this one fired-up, I'm going to reveal my best Q-vinegar recipe. And what amazes people is how simple it is.
In a 1 gallon jug add:
1/2 gal of Apple Cider Vinegar
1/2 C sugar (usually white, sometimes brown)
1/4 C salt (table not Kosher)
1/4 C crushed red pepper....yes, 1/4 C
Make up 3 or 4 days in advance and just give it a shake every so often to dissolve the sugar and salt. It has some POP to it, but I never have to call the rescue squad to revive anyone. I can't recall how often I'm asked for the recipe, but the reaction is always the same: WOW, so simple, but so good.
Well, we have had a few days of 50 plus temps around here and I'm in the mood to do a few butts! ;)

If you can get free replacements, by all means, do so. Several forum members have done that.
If not, then it's relatively simple to remove them an paint them. I used Krylon Fussion semigloss. Perfect for this problem.
It's about a 2-3 hour job....except for waiting on the paint to dry.

Ditto the above plus I pull over every chance I get to let traffic by.
I went over the mountains last spring to do the "Maple Feastival."
I lived in Highland County for a while....love that part of the world.

It is real easy. I set the cooker at a med/low setting which starts out at about 200 F and ends at 300. It takes 2 hours.
I make the meat loaf a bit loose, meaning wet and it is only about 2 inches thick.
I pull it at 160 internal temp.
Here is the recipe:
The Updated (2009) - BBQ Meatloaf
2 # ground beef
1 # sage sausage
1 small onion finely chopped (1/2 C =/-)
1 Tbs chopped garlic
2 eggs lightly beaten
2/3 C bread crumbs - Italian is good. Adjust quantity to suit
1 Tbs salt
1 Tbs pepper
1 Tbs ground coriander
1 - 8 oz can of tomato sauce
1/2 C of Apple cider vinegar or my BBQ vinegar
1 dark beer (I use black and tan)
1/2 C of Brown sugar
3 Tbs of yellow mustard
2 + Tbs of Worcestershire
2 hours in the smoker @ 200-300.
Option: lay thin slivers of cheese over the top for the last 10-15 minutes.
Note: Leftover meatloaf sammies are to die for!!!

I have a Louisiana Wood Pellet grill. I have had some experience also, with the Traeger grill.
A few years ago (when I was making good money) I got the bug to try one, so I borrowed a Traeger for a while and got hooked. Ended up buying the more expensive Louisiana grill because I like the cast iron grates as opposed to the porcelain wire.
As any with appliance, they have pluses and minuses.
They are really just an outdoor oven with wood smoke. You cannot really get enough temp at the grill to sear a steak. But, they are perfect for the low and slow smoke routine. I love doing ribs on the machine. I frequently do chicken and every once in a while, I will do a prime rib....oh, I'm getting hungry thinking about it.
But, I still use a standard charcoal/wood smoker when I am doing a bunch of shoulders, etc.
I find food grade pellets on the internet without difficulty and I have enjoyed trying different flavors. My favorite type of wood is the old standby: Hickory.
The smoker I have cost about $1,400 delivered. Like I said before, I was making $$ then. Couldn't hack the price now. I have seen some Traegers on Craig's List for a couple hundred. I would probably look for a used unit.
I have had mine for 3 years and it gets used almost every weekend. If you buy one, I recommend doing a smoked meat loaf first. We did and we have never done another in the standard oven. Family won't permit it.:)

My experience was similar to Tvov. It just didn't cut it for me.
I prefer to grill on a table away from the RV, so I bought a Weber BabyQ. That works just fine for me.

On my last trip to the butcher shop, I just couldn't go $13/lb for the ribeye, but I saw a nice chuck steak for $4/lb. Heck, it was pretty good.
I've been thinking about doing some fajitas lately. According to the guide I can use skirt steak for that. Great, thanks again.
