RE: When Do You Deep Fry Your Turkey?

Every year I probably fry 5-600 turkeys between T-giving & Christmas. I recently bought a Big Easy Oil-less cooker(for personal use) and I must say it is "Damned close" to frying and equally as moist. Have done Chickens, cornish hens, turkey, Boston Butt and just yesterday did a whole ribeye rack for Christmas C'est Bon!! If you must use oil you can easily reheat the turkey or wrap in foil and put in ice chest. It will stay hot for several hours. Steve A. Dagro

RE: Cocktail Sauce- Answered

I have a catering service and have been dealing with this problem for several years. I recently left out the lemon juice and had the same outcome. May be something in the Lee & Perrin. I wisk it and the taste is the same but still has somewhat of a gelled texture. Has nothing to do with refrigeration as I have tried leaving some on the counter-top just to see and still---it gelled. Never thought of asking on here. Maybe someone on here can solve the mystery. Steve A. Dagro

Stayed at Top Sail a couple of years ago. When exiting Top sail, go to Hwy 98, take a right and a 1/2 mile or so down on the left side of Hwy 98 is a Pizza place in a little strip mall. Excellent pizza. Also was an Italian restaurant on the end of strip mall. Great area. Great restaurants. Steve A. Dagro

Ford just can't get it right. Last good engine they had was the 7.3. It ain't rocket surgery. It wasn't broke----why did they try to fix it. DUHHH!!!! Go Duramax:)

Don't have any lights near the leak. However, there are windows within 18" or so on side and rear wall. I had thought of that earlier, but saw no water marks or stains on wall. Will try to dry carpet 1st then gently run water on window and check again.

On paper I would say the order of quality would be Carriage, NuWa and probably could flip-flop with the Jayco and Heartland. But what good is the best quality with a non-functional floorplan. JMOA. Steve A. Dagro

Leak---But where???

Have a leak that has wet my carpet. Here is the story. Rear corner spot is 5 inches on rear wall and same on door side wall. Comes away from wall only about 3/4". What puzzles me is no water spots or stains on wall, ceiling or anywhere else. Resealed the gutter seam from the door to the downspout and carpet still gets wet. Any ideas of where the water can be running from to settle in rear corner. Please help me solve this soggy carpet problem before it turns into something bigger. Steve A. Dagro

Cooked the ribs on Friday---"big hit" to say the least. Cut up ribs 1st. Also used 2 -1 litre diet and 2 - 1 liter reg. Ginger Ale. I didn't use all the rub which I should have. had to add more seasoniong after pouring off the Ginger Ale. Will do them again. Steve

Thanks ya'll. That is it. The version I have was shortened and left a step out but same exact reading. Now just trying to figure out wether to cut up ribs before cooking or after. Think I may do it prior to cookig. Not as messy. Thanks again. Steve A. Dagro

That's what makes it so unique. Everything that was leftover on the food table except pickles & lettuce. Probably could scoop the concoction over shredded lettuce when done. may have to try that soon. Steve

Apricot&Jalapeno Barbecue Pork Spare Ribs

I think it was in either a August or Sept issue of Highways, Trailerlife or the like. It was a dutch oven recipe with several ingredients for a sauce and filling up the DO with enough Ginger Ale to cover ribs. Need to know if the sauce ingredients go in at the beginning with Ginger Ale or the end. Please help, plan on making this weekend on our campout. Steve A. Dagro

We stay at Luxury at least 3 times a yr. Go to the Hang-out. Itsa a mere 3 block walk to the beach road. Indoor very casual dining, always at least one band playing on the outdoor stage. Just a nice atmosphere.Also the FLORABAMA is a must go to on the Alabama/Florida line. Never been due to age of my children Now they are older and usually stay home, we just find other things to do closer to CG. Oyster House for Dinner. So many dining places within walking distance you may never have to start your vehicle. There is also a little Mexican Rest.(Tequila's) in the corner of the Bruno's Supermarket Center. May want to drive there though. Finally "Big O's" for breakfast. Have fun and leave some for me in March '10. You can also rides bikes on bike path the probably all the way to Orange Beach, along the beach road and then some.

In a foil or Pyrex pan put shrimp, butter, lemon juice, garlic, hot sauce or a sprinkle of crab boil and fresh Basil. Place on grill and cook til pink "DON'T OVERCOOK THEM. I repeat----DO NOT OVERCOOK THEM. Get you some french bread sliced in 1" slices and then decide wether you want the shrimp or sop up the juice with the bread. C'est Bon!!!

Grilled Hamburger Whatever!!

Clever name right?? A couple of years ago I was catering a Grillfest function at Hammond,LA Camping World and came up with this one. After grilling several hundred burgers my crew was hungry but definetely didn't want a hamburger. So we took 5-6 grilled burgers and cubed them up. Then in a cast iron skillet that we had been using to saute onions, we added onions, tomatoes chopped up from the sliced ones for the burgers. Let that simmer a few minutes. Then add the cubed burgers and cook another few minutes til hot. Finally top with a big handful of shredded cheddar which we also had for the burgers and cover for a few minutes till cheese is melted. Play with the quantities to your desired taste. Talk about good. I let one CW customer try it and the next thing we knew we had to do another batch for my crew to eat. Try and enjoy. OH, salt&pepper to taste. Steve

Lake End Park, Morgan City,LA

Has anyone ever been to Lake End Park Campground in Morgan City,LA. A group of 6 RV's are considering going there the weekend of Nov. 6-8, just to get away and watch the LSU/Bama Game. Brisket and she loved it. Marinated it for 24hrs. in Claude's Brisket Sauce, smoked it for 5 hrs, then I made a sauce with Cajun Power Marinate(about a cup) along with 3 cups of McCormicks AuJus sauce C'est Bon!!!! Now my big 5-0 is next month. Thanks again for all the ideas. I cop & pasted several good recipes from the replies. Steve
