I don't remember this in boy scouts but it sure goes good with a grilled steak or chicken.

2 large potatos or more
1 or 2 onions (brown or red depending on tastes)
Butter or Pam type spray
Aluminum foil

Take the potatoes and cut up into cubes; also dice the onions then mix the two piles together. Take a large square of the aluminum foil and make sure the shinny side of the foil is inside and spray with Pam. Place a handfull of the mixture in the foil and season to taste. Then take the 4 corners and pull them up and twist into a Hershey's kiss shape; try to seal off the foil so the mixture is fully enclosed in the foil. Place on the BB-Q and cook; usually it will take 20-30 min depending on the size of the potato cubes.
We also have variations like adding diced ortega chiles or jalapenos; quick and easy to make and if any are left over they are great with breakfast!

Mdh4u,

That is a great recipe! We make ours by putting margarine on the shiny side, (both sides on inside, use a rubber spatula), thinly sliced potatoes and onions, sometimes bacon bits too. Season with Lawry's and freshly ground black pepper. Fold all the edges so it makes a tight seal. Put it on the grill 20 minutes before the meat and turn occasionally.

One of our favorites that the kids will eat too!

We do a similar version of this. Slice potatoes, chop onions finely. I use a double thickness of heavy duty foil, first putting a few slices of bacon down (for flavor and in place of pam/shortening). Layer the potatoes and onions, add seasoning salt and pepper, and a few more slices of bacon on top of them. I cover with a second double thickness of foil, seal up the edges, and cook on the grate over the campfire, flipping the package 3 or 4 times during cooking... takes about 30-40 minutes... one of our absolute favorites with any meat dish.

Take it all the way to a full Boy Scout Dinner- A couple of hamburger patties on the bottom, then the potatoes, slice up a carrot on top of that add a little onion, butter, salt & pepper. Wrap the whole thing in the foil, 15 minutes a side and voila! a whole meal cooked in the fire or BBQ grill and no pans to wash afterwards.
