Oven Baked Macaroni and Cheese
Melt 3T. margarine in a 2 qt baking dish
Add 2 1/2 cups UNCOOKED elbow macaroni, mix together
Toss lightly together 1/2 t. salt, pepper to taste,
3 cups shredded cheddar cheese...Add to macaroni
Pour in 1 quart of milk. DO NOT STIR....DO NOT COVER
Bake at 350 for 1 hour
This will turn out like Mom's homemade casserole. I have added Ham. The last time I used longhorn cheese and didn't have enough so substituted cream cheese for part of it, without any problems.

I love Macaroni and Cheese so much I stoped at the store on the way home last nigh to pick up the ingredients in the above recipe and made it. Everyone has different tastes and I personally prefer a more creamy cheese sauce.
So I went looking around and found 2 more recipes that I thought I would try.
Stove Top Mac-n-Cheese
Recipe courtesy Alton Brown
1/2 pound elbow macaroni
4 tablespoons butter
2 eggs
6 ounces evaporated milk
1/2 teaspoon hot sauce
1 teaspoon kosher salt
Fresh black pepper
3/4 teaspoon dry mustard
10 ounces sharp cheddar, shredded
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy.
Baked Macaroni and Cheese

1/2 pound elbow macaroni

1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.

This sound good and easy to make while camping, too. I might start my own mini-cookbook of recipes from this forum by printing them and putting them in the TT.
One of my cookbooks recommended adding canned tomatoes to it. I tried it and my husband liked it.

Next time you make mac cheese, just open a can of stewed tomato's or a can of what they call italian diced tomato's and heat it up.
Goes great with the mac cheese either serve on top of the mac cheese or in a small bowl on the side.
Love the simple baked recipe as well as the complex one with onions etc will have to give em both a try, simple one for the road and complex one for a fancy feast at home.

To "doctor up" packaged macaroni and cheese add a can of Rotel for a new great tasting dish! I was visiting relatives in Ms and they serve this to their guest!

Rotel is the spanish/mexican version of tomatoes in a can. Right there in the canned tomotoe isle. You can mix/heat with velveeta cheese for deelish cheese dip so it makes great sense it would be good with mac and cheese.
Muy mucho hungry now.
