Two small or one medium zucchini, cut in 1/4" slices
1 medium red onion
Olive oil
2 c. shredded cheddar cheese
Salt and pepper
Mushroom slices (optional)
Use sufficient olive oil to lightly coat zucchini slices - set aside and sprinkle liberally with salt and pepper.
Slice onion in thin rings
In a medium baking dish, layer zucchini, onion slices, mushrooms if you like them, and cheese
Repeat, ending with cheese layer
Cover with foil and bake at 350° for 45 minutes. I used to make this with 1 stick of butter, sliced, but have gone to olive oil for cholesterol reasons It's actually better with the olive oil. If you choose to use butter, layer it with the other stuff before you sprinkle the cheese.
