I was wondering how many of us here are doing the Atkins diet???? I saw a few postings here under low carb.
I'd like to find more low carb favorites for RVing. Especially those that could be made in a crock pot.

betsypupcdx, I too would like a few more Atkins recipes for the road. My wife and I are both on the Atkins diet and are always looking for low carb stuff that tastes decent. Welcome to the forum. You will find lots of unique folks here, most with a lot of good info.

Try going to this site, click on the bulletin boards and you will find a lot of neat places to check out. I've got a LOT of recipes from here including a lot of "crockpot" recipes.

Count me and Otis in on Atkins also. So far I've lost 25 and Otis has lost 40+ (he did have more to lose). It is kinda difficult to find a variety of food while on this diet. We basically eat meat & veggies for meals. We do cheat though (a person has to have fun)! I'll cook up about 10 french fries for each of us sometimes (helps with the cravings). A good low-carb recipe is chicken cordon bleu (one of my specialties). Agnes

If you are really wishing for that bread coating, skip the french fries as the carb shock will inhibit the diet. Try this:

Use fried pork rinds ground up in a processor or rolled between wax paper. Add your regular seasonings like garlic powder, oregano, whatever you normally use for coatings. Dip your chicken strips or fish in egg, then into the 'breading' and off to the fryer. It is a pretty good substitute. They come in about a dozen flavors too, so they are a decent sub for potato chips.

here's a great recipe for low carb
Bacon Cheesburger Quiche

1 # lean ground beef
1 small onion chopped
4 slices crisp bacon crumbled
1/2 small green pepper chopped
3eggs
1/2 cup mayo
1/2 cup half and half or cream
1/4 cup sour cream
8 oz shredded cheese
garlic salt to taste

Brown meat, with onion and peppers. Drain
Press into bottom of 10 inch pie pan or baking dish
Sprinkle bacon pieces over meat
in bowl wisk together eggs, mayo, sour cream, add shredded cheese
Pour over meat
bake at 350 for 40 to 45 min.
Total carbs per serving about 3-4

Very tasty and filling, also great as a left over the next day!!!!

I don't understand this diet. If you eat half/half, cheese, meats, ect. aren't you adding too much fat to your diet? Is this heart healthy. Fill me in.

I have been on the Atkins diet since before it was popular and it is a healthier
lifestyle than most ever think about . I enjoy the food and the creative cooking
that is a good habit anyway .

I eat the same things while traveling that anyone can eat at home and I actually
save money because I stay away from fast food places .
