Please post some recipes for delicious hush puppies. I haven't had any luck lately with the store bought mixes or frozen brands. I was so disappointed Sunday when I made a big batch of "Uncle Buck's" brand hushpuppies from Bass Pro Shops and they had no taste...I even added some extra ingredients. Help! I would greatly appreciate it.

My mother has been making this recipe for years and we always loved it. She always made it with fish and fried them in the same oil wich gave them a little more flavor. I've added the Fish Batter recipe too.

Hush Puppies
1/2 cup sifted flour
2 teaspoons baking powder
1 tablespoon sugar
1 beaten egg
1/2 teaspoon salt
1 1/2 cups corn meal
1 small onion finely chopped
3/4 cup milk

Mix dry ingredients and add onion. Combine egg & milk; beat. Add dry ingredients. Drop teaspoonful of batter into hot fat which fish has been fried in. Serve with fish and eat while hot.

Fish Batter
1 egg beaten
1 tablespoon mustard
Dip in egg batter & roll in Potato Buds or flakes - Fry.

Credit where credit is due...here is one from a local cookbook (coastal NC) composed of family recipes. Definitely use buttermilk and the bacon grease. One nice addition to this is to add finely chopped onions.

INGREDIENTS
2 cups yellow corn meal
1 cup plain flour
2 eggs
1 cup buttermilk
3/4 teaspoon Lowrey's seasoned salt
1/2 teaspoon ground pepper
1 teaspoon baking powder
2/3 teaspoon baking soda
1/8 cup bacon grease or cooking oil
Sufficient vegetable or peanut oil to deep fry

PREPARATION
Preheat oil in fryer, pot or frying pan on a medium-hot temperature (375 is a good target temp).
Mix the corn meal, flour, seasoned salt, pepper, baking powder, and baking soda in a bowl.
Add the eggs, oil, bacon grease and buttermilk and stir until blended to the point the mixture will hold a ball shape.
Using either your hand or a table spoon, form small balls of the mixture slightly smaller than the size of a golf ball.
Carefully place them into the hot oil.
If not completely covered, use a long wooden spoon to rotate them so that they brown on all sides.
If oil is deep enough, they should eventually begin to float - they are done.

They have the "Hushpuppy Championships" in Lufkin Texas and it seems that one of the "special ingredients" is a touch of sugar.

For a variation, add in some sweet corn.

Sometimes called corn fritters, but a great tasting change.

This recipe I found on another message board. We have tried them and they are pretty good. Try substituting 'Tony Chachere's' spice and herbs, or any cajun seasoning for the salt and pepper!


HUSH PUPPIES WITH A KICK


INGREDIENTS:
1 1/2 c. corn meal, self-rising (Aunt Jemina's Buttermilk Corn Meal is what I use)
1/2 c. flour, self rising
1 t. salt
1/4 t. black pepper
1/2 - 1 c. buttermilk, more if needed (I used about 3/4 cups)
1 egg, beaten
1 onion, finely chopped
1 (4 oz.) can diced green chilies

INSTRUCTIONS:
Heat oil (I used canola oil, peanut oil is also very good) in deep fryer to 375-400
In large mixing bowl, combine corn meal, flour, salt, black pepper and milk.
Mix well. Add beaten egg, onion and peppers.
Shape batter into balls, about 1 tablespoon. Using slotted spoon carefully place in hot oil. Cook about 9/10 at a time, until golden brown. They do puff up. Remove from oil and place on paper towels to drain. Serve hot.

Hush Puppies from Sanitary Fish Market, Morehead City, NC Waterfront.

1 lb. fine corn meal
1 egg
1 Tbsp salt
1 Tbsp sugar
Pinch of soda
1 cup bittermilk

Stir, adding water to thick consistency. Drop in deep fat (preferably
Duk's peanut oil. Cook at temperature of 375. Serves 6.

Good with clam chowder.

Please do not drop water into hot oil.

Use a tiny bit of the batter to see if it starts to sizzle for checking frying temp.

Water in hot oil will splatter hot oil out of the pan and could be very painful. Been there and done that OUCH.
