Please list recipes that you may have for one pot dinners. I make spaghetti, chili, soup...but would like to find something new and flavorful that we can have a couple of meals from. Thanks!

do this at home a lot when there isn't much left in the house to eat..


casorol dish of some kind...


couple cans of cream of mushroom soup,
instant rice, equal part rice & water.. then add more water
frozen chicken breast
lil garlic, onion and basil and french fried onions in the can

bake it for an hour or so, lil added extra water because the chicken will absorb some, and because of baking, you loose a little

..when chicken is done, grate some peperjack cheese on top, put back in on broil until cheeze is brown

then mix up some jiffy cornbread mix, (make it just a LITTLE runny)
poor this on top, put back in oven oncovered until brown. Very yummy, easy, and VERY CHEAP

Note:... this is one pot.. but you need a bowl to stir up the jiffy mix, but it rinces right out!

Pork chops,or chicken,
Potatoes
Carrotts
Large onion
can tomatoe soup
salt and pepper
beef or chicken bouillion cube
peal potatoes and cut into big chunks
scrap carrotts and cut into thumb lenght pieces
peal onion and cut into fourths.

In a large pot brown pork chops, or chicken. remove from pot add vegetables, and can soup and 1 can of water, and bouillion cube. salt and pepper readd pork chops, or chicken cover and let simmer until vegetables are tender.

Red Rice, Sausage, and Beans

1 kielbasa (I use Healthy Choice)
1 can Manwich sloppy joe sauce
3 cups Minute rice
1 can chili beans
3 cups water
1 small onion, minced

in an electric frying pan, saute teh minced onion.
slice the kielbasa into 1/2 inch slices
mix all ingredients right in the frying pan.
Cook until rice is tender.
Optional- I like to add a can of drained MexiCorn.
Top with shredded cheddar if you want, cover, and let cheese melt.
I also like sliced black olives in it.
Takes aobut 10 min to fix, about 20 min to cook. you could put it in a crockpot, too, on low.

My mom used to make one... We called it "damfino"

Cubed potatoes
Chopped carrots, celery, onions, garlic, tomatoes
Pork Chops on top.

cover with foil, bake for an hour at about 350 or so....

Got it's name when my uncle asked her what it was called, and she replied:

"dam if I know"

SHRIMP BOIL!

Shrimp
Corn on the Cob
Potatoes (small new ones are best, but 2" cubes work fine)
Zatarins Shrimp Boil mix.
Boiling water.

Bring water to boil with Zatarins added.

At 20 minutes early- add potatoes
At 15 minutes early- add corn
At 4-5 minutes early- add shrimp.

Pick ingredients from water with tongs or drain thru collander.

Cold brewski or chilled wine with bread/butter/garlic complete the meal.

One pot to clean.

Now, I'm hungry--gotta go!!!

Baked Chicken & Vegetables

4 frozen boneless skinless chicken breasts
2 cups of yellow squash, cubed
2 cups of eggplant, peeled and cubed
1 large green bell pepper, seeded and sliced into strips
1 medium onion, thinly sliced
2 medium tomatoes, thinly sliced
1/3 cup unsweetened applesauce
1 1/3 Teaspoon salt (mix into applesauce)
3 cloves crushed fresh garlic (mix into applesauce)
1/4 Teaspoon Cayenne pepper (only for the truly brave at heart!)(mix into applesauce)
1/4 Teaspoon cumin
1/4 Teaspoon oregano
1/4 Teaspoon marjorum
1/2 Teaspoon dill seed (NOT DILL WEED)

Preheat oven to 350 degrees

In a large baking dish (14 x 14 x 2),
Spray dish with non-stick spray, place frozen chicken in dish.
Layer the squash, sprinkle with 1/3 of the garlic/applesauce/salt mixture, sprinkle on the cumin.
Layer the eggplant, sprinkle with 1/3 of the garlic/applesauce/salt mixture, sprinkle on the oregano.
Layer the bell pepper and onion, add the remaining garlic/applesauce/salt mixture, sprinkle on the marjoram.

Cover, toss into oven, bake for 1 hour.

After the hour, remove from oven, layer on the tomatoes, and sprinkle with the dill seed. Cover, bake another 15 minutes, remove from oven, allow to set 10 minutes prior to serving.

Serve hot or cold. The smell of this cooking is amazing!
Leave the chicken out, and serve as a side dish at Thanksgiving.
Makes an OUTSTANDING omelette.
