8 T (1 stick) unsalted butter, melted
1 large egg lightly beaten
3/4 cup sugar
1/2 cup dark molasses (not blackstrap)
1 cup water
2 1/4 cups all purpose flour
1 t. baking soda
1/2 t. salt
2 t. ground ginger
1 t. cinnamon

for the topping
3 T. unsalted butter
3 large apples, peeled corerd and sliced 1/4 inch thick
3 T light brown sugar packed

Preheat the oven to 350 degrees F. butter and lightly flour a 10 in. cake pan

In a med. bowl mix (hand mixer if you have it low speed) combine butter egg and sugar. add molasses and water and mix. In another bowl, sift flour, baking soda,salt,ginger, and cinnamon together. Working in batches, mixing afer each addition, add the dry ingredients to the molasses mixture. Mix until smooth.
Pour into the cake pan and bake in the center of the oven for about 35 min. until browned and the top of the cake feels dry and firm to the touch. Let cool in the pan for 10 min. then turn out onto a wire rack to completely cool.
For the topping:
In a large skillet, melt 3 tablespoons of the butter over medium heat. ADd the apple slices and cook stirring until tender, about 10 min. Add 3 tablespoons of the brown sugar and stir to combine. cook a few more seconds to dissolve the brown sugar then pour it over the cake and serve

The wife baked one for a hen party she went to everyone wanted the recipe so I printed out about a dozen copies and sold them for a piece cake when it's baked. Thanks for making my wifes cake the hit of the party.

Wish there was some way I could have gotten in on that deal.. like on halves.. good cake.. glad it was enjoyed
