As we finished the last piece of the Apple Cake this evening, waiting for the Angel Food Pineapple cake to cool, I thought why not a Fruit Cake made in the same fashion. So the Question
Does anyone have a receipe for a "dump" or quick mix fruit cake? I thought about a Jiffy spice cake mix with tons of dried fruit cake mix. Would that do it? Has anyone tried this approach or another to product a Fruit Cake. Suggestions?

OK, strudle, you asked for it! Throw away the scales before you make this one. I have not tried fruit cake mix but this should give you the rough proportions of wet and dry. Let me know if you try it!

Cherry Dump Cake
Oven 350 F.

1 can (20 oz) crushed pineapple with the juice
1 can (21 oz) cherry pie filling
1 package yellow cake mix (plain)
12 tablespoons (1 1/2 sticks) butter, melted
1/2 cup unsweetened grated coconut
1 cup chopped pecans

Place a rack in the center of the oven and preheat.

Evenly cover the bottom of an ungreased 9x13" pan with the pineapple.
Spoon the cherry filling over the pineapple, as evenly as possible. Pour the dry cake mix over the fruit to reach all edges of the pan. Drizzle the melted butter over the whole thing. Sprinkle the coconut and nuts over the top and bake for about an hour (check after 55 minutes) until a toothpick inserted in the middle comes out clean. Cool on a rack.
Serve warm with ice cream and try not to make pigs of yourselves

Heathertee, this sounds like a version of the Pecan Cherry Bars my wife just made. Now that GOOD STUFF! I plan to tinker around after Christmas with the Fruit cake idea. By then Christmas dried fruit mix will be on sale so instead of a $5 mistake it will be a $1 mistake. I think the secret to success will be the amount of batter to fruit. With a Southern Fruit cake its about 80% fruit and nuts to batter ratio.
While good professor makes her own cake type batter, the Pecan Cherry bars could be made with a cake mix, mix lightly with cherry pie filling, add pecans to the mix and on top for garnish. If you want the her full recipe email me.

This isn't a cake mix base, but it is easy and pretty darn good. I put an apricot glaze on mine, and then hide it so it can do it's thing


THE Fruitcake
20 ounce jar mincemeat
2 eggs, beaten
2 cans sweetened condensed milk
2 teaspoons Rum
3 cups mixed candied fruits (or yur own choice. I use dried apricots,dates, candied pineapple, cherries, sometimes apple)
2 cups coarsely chopped walnuts or pecans, or a mixture of both
1 1/2 cups plain flour
1 teaspoon baking soda

Combine mincemeat, eggs, milk, and flavoring well. Chop fruits coarsely if not already chopped. Mix with flour so all pieces are coated to prevent floating. Stir in nuts. Add to mincemeat mixture. Stir in soda just until blended. Pour into 2 large greased metal loaf pans. Place in oven immediately. Bake at 350° until golden brown and top springs back when center is touched lightly with fingertip, about 1 1/2 hours. It is very moist so testing with a toothpick doesn't work.
Recipe can be halved to make one loaf. Instead of 2 large loaves, this recipe will make about 6 to 8 smaller ones, depending on size of pans. This cake freezes well. It can be brushed occasionally with brandy or rum if desired. Keep tightly wrapped in foil and refrigerated so it doesn't dry out.

Thanks for the recipe, I will try this one after we return from Corpus a week from tomorrow.
What I was looking for was a dump version of a fruitcake, like mixing a cake mix of some kind with the dried fruit and bake. A KISS type of cake. I'm sure you can decode that one, if not the "Captain" definately will.

PS: My bride is baking christmas cookies right now and the house smells so good!!!!!!! She bakes somewhere in the range of 25 to 30 different types of German Bayern cookies each Christmas.

Strudle, there is a cookbook called The Cake Mix Doctor, published by Workman, that I think might be of interest to you. There is a recipe in it that may resemble fruitcake but requires making a starter (Friendship Cake). Lots of good-sounding recipes; the Cherry Dump cake came from it(which I have made several times).
