The fridge is full of leftovers just waiting on a good recipe. What's your favorite? We could all use a little inspiration. Here's mine.

Layer a buttered casserole with stuffing. Add a layer of sliced or chunked turkey. Add 1 cup turkey stock and cover the entire top with gravy. Bake, covered, for 30 minutes in a 350 degree oven. Serve with cranberry sauce.

I take the less juicy and succulent parts of the leftover bird and chop fine in the food processor. Dump into a bowl and add mayonnaise and a little pickle relish to taste and use with a salad or on sandwiches.
This is even better with ham or leftover roast beef.

Take the biggest pot you have, put the left over turkey carcass in the pot and cover with water. Add spices, a little poultry seasoning, salt & pepper. Bring to a boil and cook until the meat is all off the bones. Remove bones and add uncooked spagetti noodles cook until tender. Now you have turkey soup. Add canned veggies for a change of pace. Freeze what you don't eat for another rainy day...

We had ham ... any good left over ham recipes? I've got the ham bone in a pot of beans right now.

Wow,
These sound great! I can't wait to eat up the ham and make some beans with the bone also!!
I like putting ham or turkey or both in my home made macaroni and cheese, makes it taste much better!!

My favorite with leftover ham is a plateful of hot biscuits. But, seriously, scalloped potatoes with ham, sauteed cabbage and ham, potato soup, blackeyed peas with turnip greeens and ham, ham casseroled with pineapple and sweet potatoes, ham salad or an old family favorite, bbq'd ham sandwiches. Hope I have given you some ideas.

The best leftover ham recipe I have had is split pea soup, and I got the recipe right off the back of the bag of split peas.

It cooks down so much, you should just be able to pull the hambone right out after the meat falls off.

Hot turkey sandwiches:

2 cups chopped turkey (I used food processor)
1/2 cup turkey broth
1/2 cup half and half
salt
2 tbsp. flour
2 tbsp. melted butter

Put turkey, broth and half and half in saucepan. Heat to almost boiling. Add salt. Combine flour and melted butter. Stir into turkey mixture. Cook until thick. Serve on buns as sandwiches, or serve as gravy over biscuits.

Don't have a real written recipe for that casserole. But it goes something like this:

Layer slices or pieces of cooked sweet potato in a buttered casserole (leftovers or right out of the can).
Top with ham slices or pieces.
Top ham with pineapple rings or chunks and dot with butter.
Cover and bake 35 - 45 min. at 350 degrees or until heated thru.
(A topping of brown sugar and pecans can be added if you really want to guild the lily....)
