Started a thread recently about cheesecake and one of the responses reminded me of Quiche. What are your favorite recipes? Let's play the game differently this time. First, you show me yours, then I'll show you some of mine.

I love Quiche! My sister makes an awesome Chicken and Broccoli one. She bought me a pie (quiche) plate thing, but I have no idea how to make it.
I know she uses Chicken and broccoli (obviously) sour cream and eggs - whatever else, I have no idea!
Guess that's not enough of a recipe for showing mine..

You asked for it... I have made this one for years. Takes a little time to assemble the ingredients but well worth it!
Savory Egg and Tomato Pie
9" pie shell, well-chilled
1/2 lb bacon, fried crisp, drained and crumbled
3 or 4 ripe tomatoes, skinned, seeded and sliced
3 eggs
1 and 1/2 cups light cream
1 tsp dried crumbled sage
1/4 tsp dried thyme
3/4 tsp salt
1/2 tsp pepper
1 cup grated Swiss or Gruyere cheese
1 package frozen mushrooms in butter sauce, thawed (or gently saute 20 button mushrooms in 2 TB butter and cool slightly
Oven 400 F.
Put the bacon in the bottom of the pie shell, then half the tomatoes, then half the mushrooms. Cover with all the cheese.
Beat together the cream and seasonings and pour in gently and evenly. Spoon the remaining mushrooms in evenly.
Place pie in lower third of oven and immediately turn heat down to 375 F. Bake 35 minutes or until almost firm. Cool on a rack for 15 to 20 minutes. Heat the remaining tomatoes and spoon onto the top in a decorative manner. Sprinle with a few sprigs of parsley and serve to your admiring family.
Need I add, this is wonderful cold, for breakfast?

Can't say I ever really follow a recipe for quiche...I just put things like eggs, cream or milk, ham chunks, sliced mushrooms, grated cheese (whatever kind you like,) chopped onions, or some steamed imitation crab, the possibilities are endless. I've made low fat quiches. They are excellent too. Use a bunch of egg whites, add maybe 1 or 2 yolks. Use skim milk, and fat free cheese. Quiches are great because you can make them up ahead of time, and microwave a slice later. Goes great with a pastry and fruit!

Carol—Don't worry. When I started the thread on cheesecake, the first person to respond said she loved cheesecake but didn't know how to make it. She has lots of ideas and recipes now and, I expect you'll find several ideas here too.
Heathertee—Your Savory Egg and Tomato Pie with bacon and swiss sounds like a nice twist to the very classic Quiche Lorraine with bacon, swiss and onion. Your version sounds very flavorful and delicious.
Joanne and Richard—You cook very much like I often do—a little of this, a little of that. One of my favorite things to do for dinner is to pull a bunch of things out of the refrigerator and then to make something out of them all. If you have eggs, cheese and some milk or cream, you can add almost anything and you have a "quiche".

Your favorite pastry recipe
1/2 lb Hot or Sweet Sausage (or mixed)
4 Eggs
1 C Milk*
1 C Heavy Cream*
Salt and Pepper to taste
Dash of Grated Nutmeg
1/2 lb Mozzarella Cheese
1/4 C Grated Cheese (Parm, Romano, whatever you like)
Cook sausage thoroughly, drain and crumble
Place sausage in quiche pan (or any pan) prepared with pastry dough
Sprinkle Mozzarella and grated cheese on top of sausage
Mix eggs, milk, cream, salt, pepper and nutmeg and
Pour mixture over cheese carefully
Bake at 375F until golden or until knife inserted in center comes out clean (approx 45")
Serve Hot or Cold
*May use half and half instead of milk and cream
*To reduce fat somewhat, use 2 C 2% Milk and part-skim Mozzarella
No one else has come up with another quiche recipe? All right, here's an idea with a little less calories and fat.
Same basic recipe as before, except substitute Steamed Broccoli or sauteed Mushrooms, Onions and Bell Peppers for the Sausage. Because the vegetables have a liquid of their own, reduce the amount of Cream, Half and Half or Milk to 1 1/2 C. Bake as before.
