I'd love to get make ahead recipes that you all like to take camping. Here's my favorite, as it always taste better reheated!

Judy’s Mexican Chili

1 LB ground beef
Chopped onion (to taste)
2 gloves of garlic, minced
1 package of Taco mix
1 - 15 oz can of stewed tomatoes (I prefer Mexican style with jalapeno peppers)
1 - 15 oz can of tomato sauce
1 - 15 oz can of Mexican Fiesta Corn (drained)
1 - 15 oz can of Kidney beans (drained)
1 – 2.25 oz can sliced black olives (drained)
Salt & Pepper to taste

Brown ground beef and drain off fat. Add taco mix, onion and garlic; cook until onion is soft. Add remaining ingredients.

Simmer chili on top of the stove for about an hour stirring when needed. Or pour into a slow cooker and cook all day.

Optional, add cheese to garnish (I like peppered jack cheese) and serve with corn bread.

Great re-heated!

Great dish to freeze and heat and serve later

Not very fancy but, i cook meatloaf at home. It can be taken along and reheated for dinner or sliced cold for sandwiches. We also like to BBQ a tri tip and use it in the same way.

We like to "vacation" with as little meal prep as possible. A few times we bought Lasagna from Costco and liked it. It came in a large tih throw away pan and baked up in 30 minutes. We also make up pan cake mix in advance. About half the time we camp with friends and take turns with meal provisions and prep.

i usually do a meatloaf ahead, and also, i cook a brisket, slice it and fix one meal packages with gravy poured over it. all i have to do is microwave a couple potatos and open a can of green beans or whatever.
another thing i do is cook a whole chicken, de-bone and chop it up and then i have chicken for salad or hot sandwiches with gravy.

and sometimes, i fix taco meat ahead or spagehtti sauce with meat.

the more i can do before i leave, the less cooking i have to do on the road.

I have aso found that a batch of green chili is great. It can be used for all three meals, tastes better after a couple of days, and freezes well. Beef Stew works great as a make ahead and reheat. I have also used brisket for BBQ beef sandwiches. Sloppy Joes can be prepared ahead. I agree. Anything I can do ahead of time is great, especially for the first few days. I need the time to unwind, and no one wants to spend hours in meal prep!

Much as I love to cook, there are limits, and one of those is doing anything fancy when on a trip. Maybe if I eventually full-time, it will be different!
I never go anywhere without a bottle of homemade vinaigrette (1/3 wine vinegar, 2/3 good olive oil, salt and pepper); (Wal~Mart has a nice plastic bottle with a covered tip and I find it perfect for this). Just before leaving I pick up a rotisserie chicken and a bag of baby mixed salad greens. Cooked veggies are in the fridge. I can have a warmed quarter chicken and veggies for supper, ready in 10 minutes. Cut up the rest of the chicken and keep cold. The next noon I make a bowl of greens with some of the chicken, and maybe a few veggies, with vinaigrette. For those into carbs, some pasta is good with this, or some croutons. This is a very healthy way to eat and surprisingly satisfying.
And yes, I love to bring a filling, meaty goulash or stew to reheat for supper! All these things will keep for several days, running out right about the time you're ready to go shopping for something a little different...say, a good thick porterhouse!

When we go camping with my sister or friends we each are in charge of 3 dinners and thats the only meal we eat together. Breakfast and lunch everyone's on their own. We do things like burritos, roasted chicken at Costco, Swanson's chicken Ala King over buscuits,rice, noodles or bake potatoes, chili beans, steaks, Costco's already made pot roast, hot dogs,Dining In shredded barbeque beef on rolls,spagetti and Hilshire Farms sausage with sweet & sour sauce,onion and bellpepper. Sometimes we have soup and sandwiches for dinner.

Even though we both love to cook, and do cook while camping, we would rather spend time hiking or fishing. So I cook chicken ahead of time (just Pam and soy sauce/tamari.) This keeps in our ice chest very well for a few days. We eat it as is, or make a salad with it. I make bean dips in the blender, (chick peas/garbanzo) make an excellent bean dip...just add garlic powder and onions into the blender. I like to make crackers to go with it. Homemade bean dip from pintos and add picante is great, I also steam cut up potatoes to make into potato salad later, and we usually take hard boiled eggs. Jello Jigglers keep well in the bottom of the ice chest, as does homemade pudding or tapioca. My husband gobbles up homemade oatmeal/jam bars we take along too. Muffins cooked ahead are great snacks anytime. We camp primitive, but eat great!

Homemade Ranch Dressing (made with mayo and buttermilk is THE best) to take camping, but we discovered that an excellent low carb substitution for this is just sour cream and the packet of ranch mix.


We love camping!!
