This is a great pasta dish and very easy to make. My daughter lived in Italy for a year and this was one of her favorite meals.
l/4 Cup extra virgin olive oil
4 plump fresh garlic cloved (minced or crushed)
l/2 teas. crushed red papper flakes
one - 28 ounch can peeled Italian plu tomatoes in juice
1 lb. penne pasta
2 Tablespoons VODKA
1/2 Cup Heavy cream
l/4 cup fresh flat parsley leaves
Saute oil, garlic, crushed red peppers and pinch of salt. Cook over moderate heat until garlic turns golden. (not brown). Crush tomatoes and add to skillet. Stir and simmer uncovered for 15 minutes.
Bring water to boil and cook pasta.
Drain pasta and add to skillet with tomato sauce. Toss. Add VODKA
Toss again, then add cream and toss. Add parsley.
I serve parmesan cheese with this. (not the cheese in a can)
Heard of it; never tried it...yet. I have some vodka in the cupboard; been around the country with me since 1985 or so... I don't drink it much!
