I love lentil soup, but I've never made it in a crockpot. Do you soak your lentils before cooking them? I don't. They should cook fine in a crockpot. I love to add onions, garlic, potatoes, carrots, celery, the usual goodies. I like to cook it with soy sauce, too. And grated cheese, when it's served.
Royal Caribbean Cruise Line served lentil soup as part of dinner one evening, except they added sliced hot dogs, or sausage that was very similar to hot dogs. Believe it or not, it was really good. So now sometimes that's how I make it. Good luck with the crock pot idea...let us know.

Hi. I tried soaking the lentils when I first tried them,about 34 years ago Have not had the need to do it again. I have put hot dogs in it, very good taste, ours sound simular, onions,carrots,fresh peas,garlic,celery, tomatoes even rice or pasta. That is the great thing about soup,add anything,if you like it do it again. Lou
Saute in extra virgin olive oil l/4 cup
4 cloves chopped garlic
2 medium onions (chopped)
l/4- l/2 lb. prosciutto(Italian ham) chopped small
Then add a package of lentils, saute in with the olive oil mixture.
Also small amount of elbow macaroni
Add to this mixture two large cans chicken broth (or you can make your own broth).
Add one head escarole (chopped)
also add on hunk of parmesan cheese.
cook slowly for an hour.
Serve warm and add grated parmesan cheese (not from a can) over the top.
