We are planning our big family vacation in March for Disney. We are going to be out at the various parks all day and want to come back to the tt with a hot meal ready to eat within 10 minutes for supper. The crock pot is the only appliance that I'd feel comfortable cooking with all day. Other than the good ole' standby of roast & chili, does anyone have any easy and good recipes for the crock pot?

I know you said other than roast, but this one's great. Just mix a can of cream of mushroom, 1 can cream of chicken, and 1 can cream of celery soups with 1 package of onion soup and about 3/4 of a soup can of water or white wine. Pour these over your pot roast and let it cook. (I pre brown the roast on each side first). I've also done this with chicken quarters, no need to pre-brown (I remove the skin). Serve with mashed potatoes and a vegetable, you've got a meal. This can also be done in a covered casserole dish in the oven at 275 degrees for 6-8 hrs. It's really tasty and tender. The soup works well as a gravy.

We found a cook book that has what your looking for.
Its Called "Fix-It and Forget-It Cookbook, Feasting with your Slow Cooker"
$12.55 @ barnes and noble.com
Just search their site for "Fix it and forget it."
We love it. If we have electric hookups we use it a lot.
Its great to come back to the trailer after a day of hiking, and have dinner ready!

Why pay for recipes? You can go online to foodtv.com or better still, do a google search. Type "crock pot recipes". I just tried it and got 23,000 hits. "crock pot recipe" only got 8000.

I love my crock pot too! Here are some of my favorites:

Chili Verde-- 3- 4 lb Pork roast, Pour in 2 cans of Salsa Verde ( Green Salsa) and let it cook for 7 hours on low. Then shred the pork, turn pot to high for about another 25-30 min. We eat it over rice or noodles. And its really good as a burrito as well.

French Dip- 3 lb Roast, 1/2 cup soy sauce, 1 beef boullion cube, 1 bay leaf, 1 tsp dried thyme, 3-4 peppercorns, 1 tsp garlic powder. Put everything in CP and add water to almost cover meat. Cook on low 10-12 hours. My family loves this served on French rolls with the "au jus" on the side just like the retaurant. Don't forget to fish out the bay leaf.

My youngest's Favorite-
Swedish Meatballs- 2 1/2 pds frozen, COOKED meatballs, 1 can cream of Mush. soup, 1 can golden mushroom soup, 1 can beef broth, 1 envelope brown gravy mix. Put everything in CP, stir well and cook 6 hours on low. If you are cooking for a large crowd this recipe doubles well. We eat this over rice or noodles or with some kind of potatoes.

I like my meat ball recipe. Pour in a bottle of hickory smoke BBQ sauce, one beer, and a bottle of John Boy and Billy's HOT grilling sauce. Add some meatballs from Sam's Club. Let it simmer all day. Serve over rice with a salad or maybe some mac & cheese.

Depends on the size of the pot, but here is one I cook in a 2 qt. model. Take baby back ribs, cut apart, and soak in beer (I use Michelob Amber Boch) at least 4 hours . Place in crock with drippings, lightly salt and pepper. Slow cook til done. About 5 minutes before serving, pour favorite bbq sauce on ribs. Meat usually falls off bone.

Funny you ask. We had a crock pot meal for supper tonight...one of my husband's favorites. Roast pork and sauerkraut. Place the pork roast in the CP and add 1 or 2 bags of sauerkraut. If time permits before you leave the MH for the day, cook on high for an hour or so, then on low 'til suppertime. I cooked a 3+ roast today for an hour and a half on high, then another 6 hours or so on low. It's good with mashed potatoes.

So glad to see all these good-sounding recipes. One of my daughters gave me a small Rival crock-pot for Christmas; for my Sportsmobile. I'll start in the house for Mom and me, with the pork and sauerkraut!
I've cooked all my life, but never had a slow-cooker before now.
