Found this in a magazine several years ago. It's great for camping as it is so easy. Great yeasty, crusty bread, best eaten on the day it's made. Makes great toast the next day.
Peasant Bread (one loaf)
1 1/2 tsp. yeast (1/2 packet)
1 cup warm water - divided
2 cups flour
1 tsp. salt
1 1/2 tsp. sugar
Dissolve yeast and sugar in 1/2 cup water. In bowl combine flour and salt. Add yeast mixture and remaining 1/2 cup water, stir until combined. Cover and let rise in warm place until doubled, about 1 hour. Stir dough down. Place in greased 2 qt. round casserole or ovenproof bowl. Brush top with melted margarine. Rise until doubled, about 45 min. Bake at 350 degrees for 45 min.
Here's another one that's good if you're cooking for two.
Crusty Dinner Biscuits
1 cup flour
1 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1 tbsp. vegetable oil
In a bowl, combine the flour, baking powder and salt. Combine milk and oil; pour over dry ingredients and stir just until moistened. Turn onto a floured surface; knead 5-6 times. roll out to 1/2 inch thickness; cut with a floured 2" biscuit cutter. Place on a greased baking sheet. Bake at 425 degrees for 13 - 15 minutes or until golden brown.
