I just made this tonight so can vouch for its tastiness.

1 cup dry macaroni
1 can cream style corn
1 can whole kernal corn, do not drain
1 to 1/2 cup diced or grated cheese.
Mix all together, pour into casserole dish sprayed with pam.
Bake 45 minutes at 350 degrees

I used colby cheese, but I think sharp cheese would be just as good..or maybe some mexican style monterrey jack.

That sounds great, Shadow, I'm going to have to try it. Here's a different corn dish:

Corn bread pudding:

1 box Jiffy corn bread mix
1 can whole corn, drained
1 can creamed corn
1 stick oleo
1 cup sour cream
3 eggs
salt and pepper to taste

Mix all together and bake at 350 until it is "set" and golden on top. (cook so that it is not runny. It has a more solid texture that pudding.)

Variation: Mix as above, add 1 cup shredded cheddar and 1/2 lb crisp fried and crumbled bacon.

Leo, That sounds pretty close to our receipe. Sprinkle some grated cheddar cheese on top and you've got it!

thanks leo

i've been looking for a recipe for something called 'mexican spoon bread' made with corn meal, cheese, chilies, etc. but haven't had any luck so far. it's something i ate at a pot luck, got the recipe and then lost it! ):
anyone familiar with it?

p.s. well, duh, i should have just looked on the internet. found it with a simple search. lol
