Ham Egg Strata

12 slices of bread, cubed
8 eggs
4 c. milk
1 c. ham, cubed
1 c. onions, finely chopped
1 c. Swiss cheese, grated
1 c. cheddar cheese, grated
1 tsp. salt
Pepper to taste
Butter a 9 x 13 inch baking dish.

Spread bread cubes evenly across bottom. Layer onions, ham cubes, cheddar cheese and Swiss cheese evenly on top of bread cubes.

Beat eggs, milk, salt and pepper together. Pour evenly over the ingredients in the baking dish.

Cover and refrigerate overnight. Bake at 325 degrees for 1 hour or until golden brown and knife inserted in middle comes out clean. Serves 8.

Mix & Match Breakfast Egg Dish

Basic recipe
8 eggs (egg substitue works well)
4 c. milk
1 c. onions, finely chopped
1 tsp. salt
Pepper to taste

Add what sounds good to you or whatever you have left over in the fridge. Here are some suggestions
diced cooked potatoes or hashbrowns
Left over meat
cooked crumbled bacon
cooked crumbled breakfast sausage or other sausage
diced ham

1 cup of grated cheese, your choice (how about pepper jack cheese) mix and match some cheese


In a Butter a 9 x 13 inch baking dish, layer the items you have decided on.

Beat eggs, milk, salt and pepper together. Pour evenly over the ingredients in the baking dish.

Bake at 325 degrees for 40 to 50 minutes or until golden brown and knife inserted in middle comes out clean. Serves 8.

Breakfast Hashbrown Casserole

(4 servings)


6 cups loose packed frozen hash browns -- thawed
2/3 cups butter -- melted
2 cups cooked ham -- diced
1 cups cheddar cheese -- shredded
1 cups milk
4 eggs
1/2 tsp. salt
Spray a 9x13 inch baking dish. Press hash browns on bottom of pan. Drizzle melted butter over crust. Bake at 425° for 25 minutes. Reduce heat to 350°. Sprinkle ham and cheese over crust. Beat eggs, milk and salt; pour over ham and cheese.

Return to oven and bake 25 minutes or until knife inserted near center comes out clean.

FARMER'S STRATA
(TOH DEC/JAN 1996)

1 pound sliced bacon,cut into 1/2" cubes
2 cups fully cooked ham, chopped
1 small onion, chopped
10 slices white bread, cubed
1 cup cooked potatoes, cubed
3 cups cheddar cheese, shredded
8 eggs
3 cups milk
1 Tablespoon Worcestershire sauce
1 teaspoon dry mustard
1 pinch salt and pepper

In a skillet, cook bacon until crisp; add ham and onion. Cook and stir until onion is tender; drain. In a greased 13x9x2" baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese. In a bowl, beat the eggs; add milk, Worcestershire sauce, mustard, salt and pepper. Pour over all. Cover and chill overnight. Remove from refrigerate 30 minutes before baking. Bake, uncovered at 325 degrees for 65-70 minutes or until a knife inserted near the center comes out clean. Yield: 12-16 servings.

Thse sound great. There are also two other threads that have stratas and baked french toast recipes. I don't think they're too far down from the top....

1 1/2 lbs susage
1 - 8 oz. can refrigerated crescent rolls
2 c. shredded mozzarella
4 eggs (or egg substitutes, I usually do 1/2 and 1/2)
3/4 c. milk
1/4 t. salt
1/8 t. pepper

Brown susage. Line bottom of buttered 13x9x2" baking dish with rolls, firmly pressing edges together. Sprinkle with susage and cheese. Beat well, remaining ingredients. Pour over susage. Bake at 425 degrees for 15 minutes or until set. Let stand 5 minutes. Cut into squares and serve immediately.

Here's on using english muffins.
Title: Cheese & Ham Strata
Yield: 6 Servings

Ingredients

6 english muffins; split
1 c cheddar cheese; shredded
3/4 c ham; diced, thin deli-style
1/4 c green bell pepper; chopped
1/4 c red bell pepper; chopped
2 tb green onions; chopped
4 eggs
2 c milk
1 tb chili powder (optional)

Instructions

In a 2-quart glass baking dish, place 6 muffin halves. In a medium
bowl, combine cheese, ham, peppers,and onion. Sprinkle half of cheese
mixture over muffin halves. In a 4-cup glass measure, beat together
eggs and milk and chili powder (or other seasoning as desired). Pour
half of mixture over muffins in dish. Repeat layers with 6 remaining
muffin halves and remaining cheese mixture and milk mixtures,
pressing muffins down into liquid. Cover with plastic wrap and
refridgerate overnight. Remove dish 30 minutes to an hour before
baking. Bake at 325 degrees for 1 hour or until golden brown

CROCK POT BREAKFAST CASSEROLE

1 32 oz bag of frozen southern style hashbrown potatoes
1 lb of bacon cut into pices, fried and drained
1/2 cup diced onions
3/4 lb cheddar cheese diced
1 dozen eggs
1 cup milk
1/2 tsp dry mustard
salt & pepper

Layer the frozen potatoes, bacon, onions, and cheese in the crockpot in two or three layers. Finish up with cheese. Beat the eggs, milk and mustard, salt & pepper together. Pour over the whole mixture. Cook on low for ten to twelve hours.
