Anyone have a great recipe for Sweet Potato Pie? Something I have always wanted to try but never have. Thanks.

I'll go you one better, try this Its a sweet dough sweet potato pie.

Sweet dough pies (1-9 in. double crust)
first just the crust:

4 tablespoons margarine
3/4 cup sugar
1 egg
2&3/4 cup flour
2 teas. baking powder
1/4 teas.salt
1/4 cup milk
1 teas. vanilla flavoring

Cream together margarine and sugar.
Add eggs and vanilla.
Add flour, salt, and baking powder, alternating with milk.
Roll into a ball and chill a couple of hours.
Roll out and cut as desired on floured board
(should make a bottom and top for your pie)
Fill with your favorite fresh or can filling and bake at 350 deg. about 25 min.

Now the filling
sweet potato filling
2 eggs seperated
3/4 cup brown sugar
2 tablespoons melted butter
1 tea.cunnamon
1&1/2 cup boiled mashed sweet potatoes
1 cup milk

Beat egg yolks and sugar until well blended.
add cinnamon, butter and sweet potatoes and beat again until well mixed and blended.
add milk slowly while continuning to beat.
Beat egg whites in a separate bowl.
fold egg whites into mixture.
Pour into crust top with second crust and bake at 400 deg. for 10 min.
Lower heat to 325 and bake for 30 min. more.

GK, it is very easy to do a sweet potatoe pie. Do you have a punkin pie recipe?? If you do, follow that recipe and use sweet potatoes instead of punkin. It is larrapin good. CJ

Cajun Cook, that sounds delicious. Thaks. I will give it a try later this week. One further question: do you serve that with ice cream or whipping cream or ??

We eat it just like that, but the whipped cream sounds good too.
