Everyone packs chips when camping, so here is a favorite of my husband and kiddos.
Terribly simple.

Corn chips
Cream Cheese
Pace Picante

Pour the Picante over the Cream Cheese and dip with the chips.

Wonderful snack.

We love this one, I make it at home because it is a little time consuming. But it is so refresing in the summer.

Cool Cucumber Salsa

4 Large Cucumbers, skinned, seeded and diced
1 Red onion diced
6 Roma Tomatoes, Seeded and Diced
1 Tbsp. Cilantro, finely chopped, I use about 1/4 to 1/2 cup
1 diced Jalapeno, I use about 1/2 sm. can diced Jalapeno's
1/2 cup Rice Wine Vinegar
1 pkg. Dry Ranch Dressing
Salt and Pepper to taste

Combine 1st 5 ingredients in a large bowl. Add vinegar, ranch dressing, salt and pepper and toss well until well coated. Add a pinch of sugar to balance the vinegary taste. Serve with Tostados

This a great summer recipe for hot days.

Have you ever tried the red "Chili" sauce over cream cheese? It is not hot, kinda sweet. You find it with the condiments.

Also Jalapeno Jelly (red or green) is good, a little spicier but tasty!

Make this dip before you leave on a camping trip or your next party.
This is sooooooooooooo good! I always get asked for this recipe whenever I serve it.

Shrimp Dip

2 (3 oz) pkg. of cream cheese
1 cup chopped green onion
1 cup chopped celery
1 cup mayonnaise
1 can cream of mushroom soup (undiluted)
2 Tbl Knox gelatin, dissolved in 6 Tbl of water
1 can of tiny shrimp, drained

Heat soup, pour into large mixing bowl, add gelatin, mix well. While mixer is still spinning add all other ingredients, mixing well. Pour into a molded dish and refrigerate for several hours. Unmold and serve with crackers.

Larry,

I am a fanatic of Tabasco, especially the new Chipotle Tabasco.

Is pickpeppa like Tabasco? Living in Colorado, I am not sure if I can find it in a store.
