We are always looking for different breakfast ideas. An easy one is Alfredo sauce with sun dried tomatoes. It's made like eggs Benedict except the sauce is Alfredo. To save on dishes when we dry camp we heat the Canadian bacon in the sauce and fry our eggs rather than poach them. Any of you have a different turn on breakfast?

We fry up some bacon, set it aside.
Fry some eggs in our pie irons.
Then we use cooking spray on the inside of the pie irons, put two pieces of bread on the pie irons.
The comes the goodies, eggs, bacon, cheese, onions whatever.
Close up the pie iron, put them in the coals to melt the cheese and brown the bread.
Remove the sandwich from the pie irons, let cool some..

Chomp away, not alot of dishes to clean and plenty nummy..

If we have some brats or sausage left over from the night before we will cut them up and throw them in too.

This year we are going to use large flour tortillas to make our version of a breakfast burrito..scramble some eggs, fry some bacon, cook some sausage, onion, tomatoes, cheese, green, yellow, and red peppers..........mmmmmmm makes me hungry just thinking about them....

Brunch Egg Casserole

7 slices white bread, crust removed
1 pound ground sausage
4 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
1 teaspoon dry mustard
2 cups half and half or milk
1. Lightly butter each slice of bread.
2. Cut seventh slice of bread in half.
3. Place bread in a 9 x 13-inch buttered glass baking dish.
4. Brown sausage. Drain and pat with paper towels. Sprinkle sausage over bread.
5. Sprinkle cheese over sausage.
6. Beat eggs. Add salt, dry mustard, and half and half or milk. Beat again.
7. Pour egg mixture over bread, sausage and cheese.
8. Cover with foil and refrigerate overnight. At this point, it may be frozen until ready to use. Remove from freezer and thaw overnight in refrigerator.
9. Remove foil. Bake at 350 degrees for 45 minutes or until casserole is bubbly and lightly browned on top. This dish reheats easily.

Note: This casserole is best when it stands 30 minutes after baking.
Serves 16

I like to use my Gerogre Foreman to cook my bacon up with. You have to use thick bacon. I'll buy a big package of bacon, cook it all up at one time and put it in the freezer. Pull out what you need when you need it. Great to take on camping trips

Bacon and Egg Casserole

4 slices white bread, crusts removed
4 eggs, slightly beaten
1/2 cups milk
1 teaspoon dry mustard
1/2 teaspoon dried minced onion
8 slices bacon, cooked and crumbled
1 cup (4 ounces) shredded mild Cheddar cheese

Place bread in a lightly greased 8-inch square baking dish; set aside. Combine eggs, milk, dry mustard, and dried minced onion; pour over bread. Sprinkle bacon over casserole; cover and refrigerate 8 hours.

Remove from refrigerator; let casserole stand 30 minutes.

Bake, covered, at 350° for 20 minutes. Uncover, sprinkle with shredded Cheddar cheese, and bake an additional 5 minutes.

Let breakfast casserole stand 5 to 10 minutes before serving.
Breakfast bacon and egg casserole serves 4.

This one's a little different as it uses potatoes instead of bread. I like to use the "Simply Potatoes" found near the dairy case in the grocery store. Some times I find the southwest style, which has a little bit of bell pepper in it, great in these types of casseroles.

I like making these breakfast casseroles when we go camping. I usually have everything all ready to assemble in the casserole before we leave home. I also like to use the low cholesterol eggs in the carton, makes my job a lot easier and no one can tell the difference.


Potato and Bacon Breakfast Casserole

6 slices bacon, cut in 2" pieces
1 small green pepper, cored, seeded, chopped
2 tablespoons finely chopped onion
6 cups cubed cooked potatoes
1/2 cup shredded sharp cheddar cheese
6 eggs, lightly beaten
salt and pepper, to taste

In a large heavy skillet, cook the bacon over moderate heat until crisp. Remove the bacon to drain. Pour off all but 3 tablespoons of dripping.

Heat the dripping remaining in the pan till it sizzles. Add the pepper, onion and potatoes and cook, stirring gently, until the potato cubes are browned.

Sprinkle on the cheese and stir until it melts. Add the eggs and cook, stirring gently, until the eggs are set. Season with salt and pepper. Sprinkle on the crumbled bacon and serve at once. \\Cruzette

Hi Dunks,

A pie iron is a great little campfire cooking implement. You can just about put anything between two buttered slices of bread and make a great campfire pie and or sandwich. Grilled Cheese sandwiches come to mind. pie filling between the bread slices make great pies! Yummmmmmmm!!!!!

Here is a hint given us by a full-timer friend. Some nice sunny morning when you have nothing going on for an hour, get a pound of bacon and fire up the outside grill. Fry the whole pound and put it on paper towels. Then freeze it in a plastic bag. When you feel the need for bacon, just grab the bag, pull 4-6 slices (thick cut is best...yum) and nuke. No grease, and no terrible burning fat smell in the RV. Great for cold mornings and clean surface burners!

Cabelas Hobo Pie Irons
Here is a link to Cabelas, they have many styles. We just bought the "double" irons last year, one sandwich at a time takes too long to feed a group. We have two double irons and two single irons. We usually have 10 to 12 people to feed so we have to keep production up to feed everyone. Awesome way to cook, these things are very versatile.
