2 c. uncooked elbow and cheese 4 Tb. butter 3 Tb. flour 1 tsp. salt pepper to taste garlic powder to taste [opt.] onion powder to taste 3 c. milk 4 oz. can diced green chilies 2 oz. jar pimentos,chopped 3 c. shredded jack cheese c c. tortilla chips crushed paprika Cook macaroni.Melt butter in a large saucepan.Blend in flour,salt, and seasonings.Cook stirring constantly,for two minutes.Slowly add the milk, stirring until smooth.Add the chilies and pimentos and cook until sauce thickens.Stir in cheese and cook until cheese is melted.Combine macaroni and cheese sauce.Serve If you have an oven: after you combine macaroni and sauce, pour into a 2 1/2 quart baking dish, top with crushed tortilla chips sprinkle with paprika and bake at 350 for 25 minutes. Serves 6.
