We've always kept things as simple as possible, being in a tent. But now that we've got our tt, we're going to enjoy GOOD FOOD! I need recipes! Although I hate to even think about it, our kids' can't leave home without it recipe has been dubbed 'Assateague beans and dogs'. During a particularly rough nor'easter on Assateague Island, instead of being sand blasted by cooking outside, the kids opted to plop some canned baked beans and whole hot dogs in one pot. They love it!! I cringe when I think about it. Well, at least they don't have expensive tastes!

HAMBURGER STROGANOFF

1 pound ground beef
1/2 c. chopped onion ( or onion powder to taste)
1/4 c. margarine
2 Tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 can mushrooms
1 can Cream of Chicken Soup
1 cup Sour Cream


Cook ground beef and onion in margarine till onion is ender. Stir in the flour, salt, pepper and mushrooms. Cook 5 minutes, stirring. Stir in chicken soup & heat to boiling. Reduce heat and simmer 10 minutes, then add sour cream, heat through, serve over
hot noodles

Beans and dogs are a staple around here. You can even find that very combination on the shelf in grocery stores. A loaf of bread and you have bean n dog heaven. Of course we also enjoy the once removed cousins of the bean n dog; chili dog and coney island dog.

We just have to have a breakfast buffet at least once. Eggs any way you please, Fried taters with the works, Hash, bacon, sausage, pancakes. We camp with a group and make it a potluck. Family would eat sandwiches all week as long as they get one big breakfast. We also have to have a pie iron and pizza ingreds along. I can skip cooking for the kids with pie irons along.

Shay Wings

5 lb chicken wings, cut into pieces, tips discarded
1 bottle Catalina or Russian dressing
1 packet Lipton onion soup mix
1 8-12 oz jar apricot or peach preserves
Optional: Tbsp Frank's hot sauce

boil wings.
Combine all other ingredients, mix, toss on drained wings, bake, broil, or grill until sauce thickens and forms a thick sticky coating on wings.
Other cuts of chicken work well too. Thighs and drums are good.
sometimes I substitute honey for all or part of the preserves. it works fine.

The sauce also works on pork or beef.

You can mix up a batch at home, and put in large zip lock in TT refrig and cook when you get where ever.

Cheeseburger Hamburger Helper with balloon bread and butter. Balloon bread is that cheap, soft white bread. (Put a slice in a saucer of water and you will see where the name came from).
Then sit down in front of the TV and listen to your arteries harden.

I like to make this a head and then take it camping, I just made it for dinner last night. It's quick and easy, as long as you are able to work a can opener!

Judy’s Mexican Chili

1 LB ground beef
Chopped onion (to taste)
2 gloves of garlic, minced
1 package of Taco mix
1 - 15 oz can of stewed tomatoes (I prefer Mexican style with jalapeno peppers)
1 - 15 oz can of tomato sauce
1 - 15 oz can of Mexican Fiesta Corn (drained)
1 - 15 oz can of Kidney beans (drained)
1 – 2.25 oz can sliced black olives (drained)
Salt & Pepper to taste

Brown ground beef and drain off fat. Add taco mix, onion and garlic; cook until onion is soft. Add remaining ingredients.

Simmer chili on top of the stove for about an hour stirring when needed. Or pour into a slow cooker and cook all day.

Optional, add cheese to garnish (I like peppered jack cheese) and serve with corn bread.

Great re-heated!

Great dish to freeze and heat and serve later.

1 package of Keebler chocolate shortbread cookies
1 package of marshmallows

Toast the marshmallows and put in-between two cookies. I just found chocolate covered graham crackers. I'm gonna try those out this weekend.

I brown hamburger, divide it, put it in freezer bags & freeze it. Then I have hamburger ready for H-burger helper, spaghetti, sloppy joes, ect. I also make H-burger patties & freeze them, only takes a few min. to thaw & they are ready. I make casseroles, chili, ect. freeze them. I have the freezer full when we take off. I can't leave home without having all this prepared. Sure beats cooking when you get there. Another favorite is eating out!!
