Sea scallops are coming in season now and they are frequently on sale. This is what I did with them tonight:
1 lb. large scallops, trimmed, rinsed well of sand, and dried with paper towels
1/2 cup finely chopped celery
1/2 cup finely chopped onion
Freshly ground black pepper
1/4 tsp. dried thyme
Pinch of salt
1/2 stick butter
1 tsp. Vietnamese fish sauce (if you have it)
1 cup dry bread crumbs (I use Panko; crunchy Japanese breadcrumbs)
Turn your oven to 475 F.
Put the scallops into a casserole that will hold them no more than 2 deep.
Saute the vegetables and butter until the moisture is nearly gone; add the seasonings, mix well and add the crumbs. Toss to coat them with the butter and spread on top of the scallops.
Bake at 475 for about 15 minutes; when the crumbs are good and brown turn the heat off and let them rest in the oven for 5 minutes more.
Serve with green beans or spinach and some crusty French bread. Have lemon wedges to squeeze over the seafood.

Hwayfun...I could fix you some hot dogs...or a PB&J sandwich...?
I have a little left and I think I'll use it for an omelet in the morning. Yum, Yum!

I thought it was unfair of you to post such a recipe 2 hours before dinner here on the west coast. I've been salivating for an hour now! Thanks though for posting it....sounds great. Will have to try it soon.

Can't get sea scallops in East Texas. I'm curious though, how much does a pound of scallops cost then in season?
We can get all the fresh shrimp we want for about $2.95 per lb.

Scallops here in Pittsburgh on sale for sea scallops are around 5 or 6 dollars a lb. Bay scallops are about 1 dollar cheaper. Cheap shrimp is 5 dollars a lb for the little pain in the butt to clean 45 - 50 count. Nice shrimp is about 8 dollars a lb.
