Poached Fish

16 oz. fish filets
1/2 cup dry white wine
1/4 teaspoon salt
1/8 teaspoon pepper
Paprika

Put fish in microwave safe
baking dish. Pour wine over
fish. Sprinkle with salt, pepper and
paprika. Cover with plastic wrap and
vent. Microwave at medium-high (70)
per cent power fish flakes. 5-7 minutes

I used to poach fish in the microwave regularly, but I liked to cook them very slowly to absorb the flavor of the cooking liquids, so I did it on the defrost setting. Lately I've just been frying them in cornmeal, but it will get old and I'll go back to poaching or some other method.
