Hi, everyone!

I remember back in my Girl Scouts days making a "one pot stew" over a campfire, and I wanted to do that again this summer. I was hoping someone could share with me some recipes (I'm sure everyone has a different one!) Of a one pot stew that I could try.

I have made one with groundbeef:

Brown ground beef, about a pound 1/2 in cast iron pot with a chopped onion.
Drain off some fat.
Add 2 or 3 potatoes diced about 1/2" cube or you can quarter those little red taters.
Add some chopped carrots, chopped celery, a minced garlic clove if you have, a couple of boullion cubes (1 per cup of water added), salt, pepper, some chopped or dry parsley and a bit of thyme, a few dashes of worchestire sauce and then add enough water to cover the mix and cook covered until the potatoes are done. Adjust seasoning. Mix a few tablespoons of flour with a little water to make something like a loose paste and add to the stew to thicken. Great with biscuits or toast. Have cooked in pan over the grill, over campfire and stovetop.

Same basic recipe as above except we called it "coffee can stew" becuase it was cooked in a....COFFEE CAN! That was a staple on our camping trips growing up!

for variety, start with hamburger, onion and garlic, drain grease, add 1 or 2 cans stewed or plain diced tomatos, 1 can corn, 1 can green beans and cubed potatos.
If you like a bit of mexican flavor, add some chili powder.
this is a good way to use leftover corn and green beans, or you can use those little cans if you're just serving two people.
great with cornbread.

I am going to have to try cooking it in a coffee can!

Leslie, instead of the ground beef you can also use cubes of beef and just cook the same way, except add the potatoes and carrots later in the cooking process so the stew meat will be more tender.
And like TexasShadow does it, is good with the greenbeans and corn too! Add those when the taters are almost done, if canned they just have to be heated up in the mix so they don't get to mushy. And be sure and drain them before adding.

Haven't done that using the canned veggies but do you think a can or two of the mixed veggies would work in there? I've always made it up the day we leave and transported it in the coffee can and we had it the first night of camping, but using canned veggies would allow this any for any meal!!

Works for me, though I hate any mix with lima beans!

HA! You sound just like my husband...it's about the only thing that he won't eat. Around here you're allowed to "pick out" the lima beans to give to the chickens.
