This is a recipe that I thought some of you might enjoy, especially those who are traveling a lot, and don't want to spend a lot of time in the morning doing the breakfast thing with all the clean-up. You can make this ahead of time at home, and just reheat in the micro, and it makes a good hearty, quick breakfast, that is cheaper than stopping at fast food places for a quick breakfast on the road. I have one baking in the oven now.
1 Trim bread crusts. Cook sausage in skillet, stirring until brown and crumbly; drain. Layer 6 bread slices, sausage, cheese and remaining bread in 9"x13" baking dish.
2 Combine eggs, milk, salt and pepper in bowl; beat until smooth. Pour over layers. Cover with foil
3 Chill casserole in refrigerator overnight.
4 Preheat oven to 325°. Remove aluminum foil Bake casserole for 1 hour or until brown and set. Cut into squares.
I have tried several variations on the meat used. You can use bacon, sausage or even the pre-cooked smoked pork chops( chopped up in small pieces).
I usually prepare it the night before when we have overnight guest, and in the morning, just pop it in the oven. If you make it ahead of time, you can cut it into serving portions and place them in zip lock bags, and put in your camper refrigerator. In the morning, just pop it into the microwave, and breakfast is ready.

This used to be a favorite of ours when the kids were little. We would make a recipe of biscuits and press it out and use that instead of bread though.
Just an added note, this is also good to take to someone's house who has just lost a loved one. Seems everyone brings food for lunch and dinner, but a lot of time families have out of town family come in for funerals, and then they have to try and figure out what to feed everyone for breakfast, while they are grieving. You can make them with different meats and bring them over so they can put in the refrigerator and bake in the morning. I always use the 13x9 Glade "Disposable Pans", that have the lids. It will surely be appreciated.
After making this breakfast pizza in double batches we use the left over bread crust that was trimmed from 24 slices of bread to make a simple bread pudding.
