anybody have a receipe for jorchata? (not sure of the spelling. moght be horchata?)
hope this is the rite spelling. I think it has mangos and?

Here's a recipe for horchata from www.recipezaar.com:

1 cup long grain white rice
2 cups skinless almonds
1 inch cinnamon bark
8 cups water
1/2 cup sugar
1/4 teaspoon vanilla extract

1. Wash and drain the rice.
2. Using a spice grinder (an electric coffee grinder works well too), grind the rice until fine; combine with the almonds and cinnamon bark.
3. Add 3 1/2 cups water and let sit overnight, covered.
4. Blend rice mixture until smooth using a blender.
5. Add 2 1/2 cups of water and continue blending.
6. Add sugar and vanilla extract.
7. Strain horchata into a bowl first using a metal strainer and then a double layer of cheesecloth; finish with up to an additional 2 cups of water until it achieves a milky consistency.
8. Serve cold or over ice.

You can also buy it in the refrigerator section at any market (Anglo OR Latin) in Placentia! It's sooo yummy, and it's really good for you, too.

Horchata
Adapted from Gale Gand

1 cup long grain white rice
2 cups almonds, skins removed
2-inch piece of cinnamon bark
7 cups of water
3/4 cups of sugar
1 vanilla bean

Grind the rice into a fine powder (a coffee grinder works perfectly). Remove the skins of the almonds by blanching them in boiling water: Drop the almonds in boiling water, scoop them out after about 30 seconds, and after they have cooled, the almonds should squirt right out of their skins when pressed between thumb and forefinger. Combine the ground rice, blanched almonds, cinnamon, and the seeds that have been scraped out of one vanilla bean, with 3 1/2 cups of water and let sit overnight, covered.

The next day, pour the mixture into a blender and puree until smooth, adding the sugar and an additional 2 1/2 cups of water. Strain the Horchata using a strainer and cheesecloth. There will be a lot of solids. Press them against the cheesecloth-lined strainer to get out all of the liquid, but don't stop there. Pick up the cheesecloth to form a pouch and squeeze out every last drop with your hands. The final step is to add additional water to thin out the drink. The original recipe called for 2 cups, but I added only one. I liked the concentrated flavor, and I didn't want it to be too diluted.

BEFORE AND AFTER Rice, almonds, and cinnamon (above) combine with vanilla and sugar to make refreshing horchata.

You're from California. Just go to a grocery store and buy some. They come in different flavors if you live in an area that has a good number of hispanic shoppers. Usually you will find it where the cold orange juice is. Don't look buy the milk.
