Hi everyone!

I was wondering if you have any suggestions on easy meals that I can make thet my family will love (husband, 4 year old and 20mths old) and that won't keep me in the trailer doing dishes all the time?

Paper plates, plastic ware, paper cups are a must have when you are camping. I make ahead of time fried or oven baked chicken because that's real good cold. Veggie Pasta salads can be made ahead of time and then add dressings as needed. Then the old stand bys such as hot dogs, hamburgers, mac and cheese, chicken nuggets, potato puffs, tacos, frajitas, these are easy to make and do not take up lots of pots and pans.

Yes. Buy `The Open Road Cookbook' by JoAnna M. Lund who is sometimes featured on RV Today. It should be the last cookbook you'll ever need for RVing.

You didn't mention what kind of rig you have - do you have an oven? If so this easy Chicken Pot pie works well:

Boil & remove chicken meat from a whole chicken. Put in mixing bowl with a large bag of frozen mixed veggies (soup style), add 2 cans Cream of Mushroom soup, a tbs or so of dried chopped onions, salt & pepper to taste. Mix well, pour into 9x13 baking pan (foil will do just fine), top with ready made pie crust, bake for 1 1-1/2 hrs & serve.

When baking - particularly foil pans - place baking pan on cookie sheet to aid in handling and help prevent the bottom from burning.

No oven? Use crock pot for roast: put roast in crock pot, add potatoes, carrots, onion chunks &/or dry onion soup mix, add just enough water to come to top of roast. Set CP on low, cook 5-6 hrs, (do not take lid off while cooking), serve.

You can do this with a beef or pork roast - pork will not take so long to cook, tho.

Sounds like you need to go to Wal Mart and buy a portable stove. At any rate, the best way around dishes is paper plates. We use Chinet when camping. Our favorite quick meal is hot dogs roasted on the fire - get those metal sticks from any good store with camping supplies. Add some chips and pork & beans and you're set. Burn the paper plates in the fire when you're done.

Joy: I'm going to give your chicken pot pie recipe a try in the dutch oven. I do an easy version - cut up chicken, a package of frozen mixed veggies, a can of cream of musroom soup, topped with Biquick (normal batch for biscuits).

Breakfast is easy ...
Muffins and fruit - no dishes
Oatmeal - one pot to wash, use disposable bowls
bacon and eggs - one pan

Lunch
We usually just snack for lunch; trail mix, some fruit, beef jerky, etc.

Dinner
Grill everything! Bring along a smokey joe BBQ, or cook right over the campfire. Grill the meat and serve with fresh veggies and a dip. The only thing you have to wash is the fork that you turned the meat with!

Me, wife, 3 kids ... no dishes. More time for hiking and fishing.

My kids are 17,7,and 4. We usually eat bagels in morning, the kids eat instant oatmeal or cereal or french toast. We also take several varieties of fruit cups and flavored applesauces in the single serve packaging. We usually eat a quick cold cut sandwich for lunch, the kids eat rollups of same(add a little cream cheese to salami)and then for Dinner we always grill something. Always take a bag of chicken breasts and pork steaks and italian salsiza and brats and hamburger patties. Breakfast makes only two bowls and spoons of dirty dishes. Lunch is on paper plates. Depending what we grill, dinner will produce no dishes if eaten out of hand (brats,burgers)or at least on paper plates. There are so many items out there for convience that are expensive to buy for everyday use (IMHO) but I always seem to take them camping for just that CONVIENCE. Purchase a small microwave from wally world, amazing how often I use it camping and it was only around $40.

I use this easy recipe for chicken pot pie when camping:

about 3 c. chopped chicken ( can use canned)
2 cans (10 3/4 oz) cream of chicken soup
1 (10 1/2 oz) can of undiluted chicken broth (I use chicken boullion cubes & soup can of water and works out fine when we're camping)
1 Pkg frozen mixed vegetables (OR 2 CANS MIXED VEGETABLES - DRAINED)

Mix together and put in greased 9 x 13 baking pan.

For dough:

1 tsp. poultry seasoning (optional)
2 c. biscuit mix
1 (8 oz) carton sour cream (this is what makes it sooo goood)
1 c. milk
Mix and pour over chicken/veg. mixture.

Bake until slightly browned and filling is bubbling up around edges.
YES, when camping I've made this in large crockpot and didn't look as good but was delicious.
This is an old recipe I got from Southern Living many years ago and hardly ever had I had to throw away a recipe I got from S.L. Enjoy!
