I agree - we don't like the sweet ones ourselves. The one we like is a little different and it's best on toast.
We take the boiled eggs mash them up with a little salt and pepper and add the mayo (not that salad dressing stuff). Then we add sliced green olives to it. Mix and spread on toasted bread. It's really good and the olives give it a little zing.
Chop the eggs, add Mayo(I use Helmans)and add a little YELLOW mustard. It gives it a good taste, plus adds to the color. Of course salt and pepper to taste. I also use a little season salt sometimes. Excuse me, I have to go make a sandwich!

Try chopping your eggs in a bowl with a pastry blender. The blades make it easy to slice thru and you can keep mashing until it is in the size of chunks you like.

I have my recipe written down. I shall try: eggs, green olives, dill relish, finely chopped onions, mayo, mustard, salt and pepper. I'll try on various breads.
