I have never made egg salad sandwiches, but you can't beat a good one.

Any recipes for egg salad?

By the way. I like a little mustard, and do not care for "sweet" mixtures. Like "sweet" potato salad.

I agree - we don't like the sweet ones ourselves. The one we like is a little different and it's best on toast.

We take the boiled eggs mash them up with a little salt and pepper and add the mayo (not that salad dressing stuff). Then we add sliced green olives to it. Mix and spread on toasted bread. It's really good and the olives give it a little zing.

Chop the eggs, add Mayo(I use Helmans)and add a little YELLOW mustard. It gives it a good taste, plus adds to the color. Of course salt and pepper to taste. I also use a little season salt sometimes. Excuse me, I have to go make a sandwich!

I use Hellmans Mayo, Heinz Hotdog relish and salt and pepper. All to taste.

Chopped hard boiled egg, chopped green onion, salt, pepper, paprika, Miracle Whip mayo and a shot of Hellman's 'Herb Sensations' mayo...

Try chopping your eggs in a bowl with a pastry blender. The blades make it easy to slice thru and you can keep mashing until it is in the size of chunks you like.

Thanks for the replies!

I have my recipe written down. I shall try: eggs, green olives, dill relish, finely chopped onions, mayo, mustard, salt and pepper. I'll try on various breads.

A little something from all the contributors.

Thanks a lot!

Paprika!

Good idea.

Another variable in my quest for the perfect egg salad sandwich.
