I found this is a 20+ year old microwave recipe book and saw that I can eat this on my low carb lifestyle diet! This was super good and I liked the fact it didn't heat up the kitchen.This is also great for low carbers that miss Italian dishes,it was a great hit in my house!
Zucchine Parmesan
4 medium zucchine,sliced into 1-inch pieces(about 1 1/2 lbs)
1/4 cup grated Parmesan cheese(I used Kraft out of the container)
1 can (8oz)tomato sauce
1/2 cup shredded mozzarella cheese
1.In 8 inch round baking dish combine zucchine,parmesan cheese and tomato sauce. Cook covered in microwave for 8 to 9 minutes,on high until zucchine is tender,stirring once.
2.Sprinkle with shredded mozzarella cheese and let stand covered 5 minutes before serving to allow cheese to melt.
(note-I think next time I make this I will sprinkle it with a little oregano or italian seasoning.) Enjoy!
