Anyone have an easy recipe for chicken parmigian ? (sp?)
I absolutely love the stuff... as is evidenced by my slight bulge at the waistline.. 
And am wondering if anyone has an easier than normal recipe for it that would be conducive to cooking in the motorhome..

My wife dips boneless chicken breasts into egg and then coats then with seasoned bread crumbs. She then pan frys them till brown and crispy. In a shallow baking dish she pours in some spaghetti sauce places the chicken breasts in the dish and covers the breasts with Parmesan and mozzarella cheeses. Bake till the cheese is melted and the chicken is done.
The sauce and crumbs can be store bought or home made. We use store bought and love this meal.

My wife has the real easy recipe:
Buy the frozen circular chicken patties. You know the kind that are already breaded and ready to cook.
Spread some sauce in bottom of pan.
Lay out the patties.
Cover with cooked noodles of choice.
pour more sause over.
sprinkle with parmezan(sp?) cheese.
top with mozzarella cheeze.
Bake 30 minutes at 350.
enjoy.

My chicken is about the same as Dave wifes but I roll my chicken in Parmesan cheese instead on bread crumbs.

Boneless chicken breast,shaked in shake-n-bake(this gives it the crunchy coating,without frying)Bake for 8-10min's & last 10 minutes add your favorite sauce & shredded cheese.Serve w/cool cucumber salad-peeled & sliced thin cucumbers,mixed w/mayo,some sugar,vinegar,splash of milk,ground black pepper & dill.

How about buying pre-breaded (except for those that are on Atkins) chicken cutlets/fingers etc such are Perdue? The messy part of breading has been taken care of. Add your favorite cheese, herbs/spices and sauce. Cooking time has been shortened as these cutlets are already cooked - so the cheese and sauce just needs to bubble to complete the dish.

I bread the chicken cutlet then pour the sauce on let that cook for 20min add the cheese let it cook till all bubbly and your done no frying required.

Yesterday afternoon when we got hooked up, I put frozen skinned chicken stripes uncoated in the small slowcooker and tossed in a can of spagetti sauce and let cook about 4 hrs. then took out chicken and cut it up and tossed it back in. Then boiled spaggetti and mixed the two. I had added garlic and arugao ( I can't Spell) served garlic bread it was delicious but now I know I forgot the Cheese. :{:{

still was good though.
I love the slow cooker - but no electric where we camp and try not to be one of those that generator users as I complain about under a different thread. As I have said many times before I need to create a solar crockpot. Then it's fresh everything tomatoes, basil, oregano to make the sauce, catch the chicken in the back (no only kidding about eating one of the pets). Simply and easy I like Mr. Blue's recipe without the breading (save the carbs for the pasta!)
