Doing lo-carb means I eat lots of eggs - which I still love after 18 months. Far from being a connoisseur, I would like to hear how others prepare their:
1. omlettes (do you add milk/water; non-traditional ingredients & methods)
2. poaching/boiling techniques - el-naturelle or poaching cups, time for the perfect softboiled, etc.

I have high cholesterol Colleen so have to limit my egg intake. I am also not supposed to eat shellfish which is another one of my favorites but I came up with a weekly compromise.
A 2 egg omlette using imitation crab or lobster makes a great meal! I am supposed to eat a lot of fish and the imitation is usually pollock which is very close to the original.

Easiest way to boil eggs...
Fill pan with cool water
add eggs
bring to a boil
cover and turn off heat
let sit, covered, for 20 min
Eggs will be perfect every time, they can't be overcooked and they seem to peel a lot easier.

I am diabetic so have to maintain a good balance with protein and carbs.
I love eggs...eat a lot of them.
We make all kinds of omelettes, some with sausage, bacon....and yes we add a bit of milk. We remove all but ONE yolk from 6 eggs to cut down on cholesterol.
You can eat a LOT of eggs and only get 3 yolks a week if you do it that way 
When my kids were little this is how I poached their eggs to put on toast. I filled a frying pan 2/3 full of water, added a few drops of vinegar and a bit of salt. I caused a swirl in the water and dropped the egg into that...it cooks perfectly and is almost round.

I also have high cholesterol and have been on a low carb diet since Feb. I eat eggs almost every morning for breakfast. I use several different types of sausage, bacon, ham and even leftover steak. I first cook the meat then add the eggs and scramble. 1 slice of low carb bread toasted and usually some fruit too.
I recently went in for my physical which includs lab work. My results were the best they have ever been. My cholesterol was under 200 (never been before) and all my other tests were better than ever. My doctor was very happy with my progress. I went from 198.5 lbs to now 170 lbs.
All I can say it works for me... Good luck... Gary...

One of my favorite egg scrambles (or omlette if you like your eggs that way) has a Greek flair: add cooked bacon, crumbled feta cheese and chopped green onions when the eggs are almost done. When tomatoes are wonderful, like now, I like to serve the eggs with some sliced tomatoes on the side. Wonderful!

Hey rodbuilder, congrats on the lower cholesterol. Cholesterol is one of the main misconceptions about the low carb diet. Even though we are eating more eggs and meat it has been show that cholesterol goes down. Did you actually read the Atkins book? It's a bit dry and technical but all the biology and chemistry of it makes sense.
I strongly recommend that anyone going on the diet or knocking the diet should read the book to get a better understanding of what happens in our bodies by cutting back on the carbs.

Wow that sounds so good..I love feta cheese...haven't tried it that way but I will 
We call them omelettes if they come out in one piece. If we mix them up while cooking they are scrambles. lol.

Hi Baseball Mom... Yes I did read the book and use some of the recipes. I didn't follow the diet as strict as they suggested but the main thing I did was cut out the potatoes, pasta and rice. Now that I have reached my goal, once a week I eat anything I want and it don't seem to have any effect on my weight control...

One of the women where I work followed it and lost 50 lbs from about January to June. She keeps it off by doing 5 days on and 2 days off. We're not following it as strictly either. The hardest thing on that was giving up fruit (and of course the chocolate chip cookies) so we have modified it some. (only the fruit aspect)
