I was reviewing the recipe archives and based on chili recipes posted there, apparently a lot of people think chili is a Mexican food. NOT SO! Read this quote from a book on chili I put together a few years ago:
"Chili - abbreviation for Chili con Carne. Chili is a Norte' Americano invention and the proper spelling. It generally is not acknowledged, tolerated, or found in authentic Mexican cuisine or cookbooks, other than to be referred to as, "a detestable concoction from north of the border".
I did a lot of research on this at the time and can provide plenty of factual information on the origin of chili if anyone is interested. Also about 100 chili recipes of mostly Texas style chili.

VERY interesting. I always thought it was from south of the border. I guess I'll have to do some research just to satisfy my curiosity.
Tell me where to find the 100 chili recipes and I wnn't have to find what to cook for the next 100 Saturdays!

Tell me what kind of chili you are looking for and I will be happy to send you the recipe. REAL Texas chili has NO beans and about 75% of my collection fits that bill.

Funny, I never imagined some people would think chili was a Mexican dish. I've never
seen it in a Tex-Mex place. But some real Texans would argue the point about the
beans.

My book entitled "CHILI" was never published. I did it just to have something to do right after I retired and I was having fun doing it. The original draft is in a bottom drawer and on my computer. YES! I will be happy to post different recipes in this forum from time to time, or if you have something in particular you are looking for let me know. I also have about 200 TEX-MEX recipes and about 1200 other recipes from an international club I belonged to for awhile. I'll be happy to share.

You must publish!!! Everyone has a different take on food, who knows, yours may be the one that people want or need. *smile* Actually, a friend of mine and I are in the process of editing (for publishing) a Greek Cookbook. It make take us a few more yers, but we'll do it!
I love Tex-Mex. Was raised in California and ate lots of Mexi-Cali growing up. I can't wait to try whatever you decide to share.
Oh.. how do you feel about corn bread??? Now there's a recipe that has hundreds, no thousands, of ways to make it and they are all different and most of them are good!

I will gladly try just about any chili recipe you post, with or without beans. I like chili. No, I love chili. Not too hot, but just with that bit of a bite. Nice part about chili, it can be done in the Dutch Oven over coals. Some chili, some corn bread, and a few beers.....Life doesn't get much better than that!!!

For an old fashioned way of making corn bread try this one.

CORN GRIDDLE CAKES
8 ounces plain flour
1 1/2 teaspoon baking powder
1/4 teaspoon paprika
1/2 teaspoon salt
6 ounces fresh sweet corn kernels, cut from the cob 1 egg, beaten
4 fluid ounces milk
2 tablespoons melted butter
Sift the dry ingredients into a bowl. Combine the corn, egg and milk, add to the flour mixture and mix well. Then add the butter. Spoon onto a hot griddle, using 2 to 3 tablespoons of the mixture for each cake. Cook until bubbles show on the surface, then turn the cakes over and cook the other sides until golden brown. Serve with crisp rashers of bacon and maple syrup.

Some of you asked for a CHILI RECIPE and here is one we like.
Chili Recipe
2 lbs. Lean ground beef
2 tbsp. Ground cumin seed
1 tbsp. Shortening
2 tbsp. Flour
1 tsp garlic power
1 tbsp salt
1.5 oz Gebhardt chili power
3 cups of water
Brown ground meat in shortening and drain.
Mix everything but the water in the meat mixing real good.
Add water and simmer for 45 minutes
